2015 – English Version A family business The House of CUPERLY was founded in 1845. Located at MOURMELON-LE-PETIT, it was at first specialized in selling wines and spirits. Champagne, then, only represented a small part of its activity. At the turn of the century, Auguste CUPERLY handed over his business to his two sons: Robert and Gérard. Robert CUPERLY started to buy and develop a vineyard at VERZY, one of the finest spots for wine-growing in the "Montagne de Reims". He decided, then, to establish his own house of Champagne there and to devote himself to its making and selling. In 1940, Jean CUPERLY succeeded his father and managed his house until he died in 1967. Then Gérard CUPERLY, his son aged 18, took over the House and managed it with the help of his mother, Mrs. Andree CUPERLY. He contributed to giving it a new impulse. In 1979, he decided to return to his roots and to install his cellars and offices at MOURMELON-LE-PETIT. In 2000, he bought Champagne Lefebvre at HOURGES. In 2009, The Company bought a new production site in Prunay where the different steps of the elaboration were gathered from pressing to the sales of the bottles. S.A. Once pressing is ended, the first fermentation takes place in steel vats then in barrels. At the House of CUPERLY, we have started to work again in this traditional way in order to increase the quality of our production. So, for the first fermentation, a certain amount of our wines is put in small oak casks containing 220 litres. A costly operation but which enables to transform the grape juice into wine in better conditions thanks to oak-wine combination. In order to keep the freshness of our wines, we avoid all malolactic fermentation. We draw them as soon as the alcoholic fermentation is over. At the beginning of the following year, the wines from different vineyards, different grape varieties and harvests are carefully tasted in order to be "blended". We need to find again the style of the house. After blending, wines undergo what we call “passage au froid”. It consists in passing the wine in that big vat at minus 4° during 72 hours. It enables to stabilize and avoid risk of crystals in the bottle. Then the wines are filtered to remove the deposit before bottling. S.A. During this process, a small quantity of "liqueur de tirage" (old wine in which cane sugar has been dissolved) and some natural yeasts are added to the wines. They enable to the wine to undergo a second fermentation called "prise de mousse" which will change the still wine into Champagne. All our bottles, whatever their size (from half bottle to Methuselah) are filled directly. There will be no further filling after the bubbles have appeared. The process consists in slide down the sediments made due the froth against the cork of the bottles. We use 19 gyropallets to stir bottles. A gyropallet can do that on 9 days whereas it needs a month with the traditional wooden rack. Disgeorging consists in expulsing the sediments out of the bottle. To proceed we need freezing the neck of the bottle in the cold mixture at minus 24°. Due to the cold, an ice-cube forms just under the cork, imprisoning the sediment. Then, the bottle is uncorked and the ice-cube is expelled through the gas pressure. The bottle is topped up with a little "liqueur d'expédition" to obtain a brut or medium-dry Champagne, before being recorded. The new cork is held in place by a wire muzzle. The bottles are washed and labelled with foil, label and back label. They are then ready to leave the cellars. S.A. The Cuperly Grande Reserve Grand Cru Brut is a blend of wines only from the Grand Cru of the Montagne de Reims area. TASTING NOTES: Straw coloured with persistent, discreet bubbles and packed with red fruit, vanilla and brioche aromas. No malolactic fermentation results in a lovely fresh taste and this very complex wine gives off a succession of flavours from spicy and fruity, through to candied fruits, honey and truffles and ends on a great rich brioche flavour. GASTRONOMY: This consistently high quality Champagne ensures that it is one of the best known in this category and remains a perfect Champagne for any occasion. Available in a 75cl bottle, in a 37,5 cl bottle and in a 150 cl magnum.
