SIMPLE GRILLED NY STRIP STEAK Ingredients: • 2 NY Strip steaks • Coarse salt • Freshly ground black pepper Instructions: 1. Let steaks stand at room temperature for about 20 minutes before cooking. 2. Preheat a lightly oiled grill pan or heavy-bottomed skillet over medium-high heat or on a charcoal grill, heat coals until they glow bright orange and ash over. Lightly oil hot grates. 3. Season both sides of steaks with coarse salt and freshly cracked black pepper. 4. Sear steaks for about 6 minutes on the first side, using tongs, flip steak to the other side and cook for another 6 minutes, or until desired . We suggest medium-rare, which would register 125 degrees on an instant-read thermometer. 5. Let steak rest for 8 -10 minutes before slicing and serving.

PRO TIP: To create cross-hatch grill marks if cooking on a grated surface, add an additional flip to each side and rotate the steaks 90 degrees when turning.
