WSC Biweekly Bulletin June 17th- 30th The theme for this Bulletin is “Jamaica in June”. Celebrate the first day of Summer (June 20th), Caribbean American Heritage Month, the anniversary of the founding of Kingston, Jamaica (June 24th), reggae music, and Bob Marley. It’s a Jammin’ June. A Note from the Director, June 15, 2021 It’s been one month since reopening and I am thrilled at the response to programs and socials!!! Since reopening, we have moved ALL fitness programs to the Multi-Purpose Room. That way, we can have the main room of the Senior Center open for drop-in activities like card games, Rummikub, Dominoes, jigsaw puzzles etc. Drop in to the Senior Center and help yourself to a game or puzzle, or bring a game from home and invite your friends to come and play! Many of you have been asking “When will you be serving meals again”? The answer is “soon”! We will start by having a cook-out once a month and slowly work our way back to serving breakfast. We were not prepared for the State of CT to lift all of the mandates so quickly! And, I did not expect to be open this early in 2021. I need to have appropriate dietary staffing before we open the kitchen to full meal service. I will keep everyone posted with up-to-date details. I look forward to seeing everyone. Thank you, Courtney Burks _____________________________________________________________________ Biweekly Recipe: Fresh and Zesty Papaya Salsa Ingredients: • 1 cup diced papaya • 1 cup diced pineapple • 1 shallot, minced • 1/2 cup chopped fresh cilantro • 1/2 cup chopped fresh parsley • 1 teaspoon vegetable oil • 1 teaspoon peeled and grated fresh ginger • 1/2 teaspoon black pepper • 1 teaspoon honey • 1 teaspoon red pepper flakes • Crackers or tortilla chips for serving Directions: 1. Combine papaya, pineapple, shallot, cilantro, parsley, oil, ginger, pepper, honey, and red pepper flakes in a medium bowl. Toss to combine. 2. Serve with crackers or tortilla chips. Makes 12 servings Food for Thought: Jamaican Me Crazy! - Crazy for Coffee & Doughnuts Celebrate June with a virtual trip to the epicenter of the world’s most coveted coffee—the Blue Mountains of Jamaica. Since we also observe National Doughnut Day in the United States on June 4, it seems fitting to applaud one of the best breakfast combos of all time—coffee and doughnuts. Introduction Since the 1930s and ’40s, when coffee and doughnut shops were among the few places of commerce with lights burning all night, they have been a regular stop for police officers working the late beat. Finding the ideal spot to take a break and grab a jolt of energy, cops were among the first to appreciate the beauty of a hot, richly flavored, aromatic beverage combined with a sweet, scrumptious fried cake. But today, this breakfast is completely mainstream. With the proliferation of coffee and doughnut franchises throughout the U.S. and Canada, this combo has become a go-to breakfast choice for folks of diverse professions. People stop on their way to work and line up in droves for a cup of java and a sweet bite to devour during their commutes. They arrive at their offices to see coffee and doughnuts set out in break rooms and on the tables of conference rooms where meetings are about to begin. Some may attribute the popularity of this breakfast pairing to convenience, accessibility, and its unique ability to satisfy the palate. But scientific study has found another answer. Breakfast of Champions Is it possible that a breakfast void of any significant nutritional value could get a body into high performance mode each morning? Science suggests that it just might. And while coffee and doughnuts may not be the healthy breakfast doctors and dieticians recommend, there are physiological reasons that humans crave them as a morning meal. The sugar in doughnuts and the caffeine in coffee combine to produce neurological effects that can boost mental performance and increase function and productivity. Glucose is a type of sugar that is essential to efficient brain function, and fasting through the night results in depleted blood sugar levels. Lack of sugar actually causes neurons in the brain to start dying off. Consuming sugar not only intervenes in that process, but it also facilitates the production of an important chemical neurotransmitter that supports learning and memory, regulates attention and mood, and aids coordination and agility. The chemical is called acetylcholine, which is produced when sugar is metabolized. When one considers that fueling an active brain utilizes the equivalent of 10 doughnuts’ worth of sugar each day, it’s understandable why a person might crave a sweet bite in the morning. That explains the doughnut side of the equation, but what about the coffee? It turns out that as the brain remains active, another chemical neurotransmitter called adenosine accumulates. As the concentration of adenosine increases, it inhibits the acetylcholine, and brain function begins to decline. However, caffeine counteracts this process, so combining doughnuts and coffee in the morning can actually boost a person’s mental capacity into high-performance mode. We’re Nuts About Doughnuts Throughout North America, doughnuts are a much-loved breakfast staple. Children’s songs have been written about them. Memorable movie scenes have been filmed incorporating them. A multitude of business franchises have been built around them. In the U.S. alone, 10 billion doughnuts are consumed each year. This popular breakfast food reportedly arrived in North America compliments of 18th-century Dutch immigrants who called the snacks olykoeks (oil cakes). The early versions of oil cakes were mere balls of cake fried in pork fat to a golden-brown finish. The outer portions of the ball cooked more quickly than the core, leaving a gooey center. To remedy this, the Dutch used a filling that didn’t require cooking, such as fruit or nuts.
