226 The Wall Street Diet Sports Bars and Bar and Grills

Wall Street Tips for meals at any bar and grill–type restaurant

n Consider soup and salad or burger/sandwich with no bread and a house salad.

n Opt for broth-based soups (such as vegetable or chicken noodle) instead of cream-based soups.

n Ask for a side salad or side veggie instead of French fries or onion rings.

n Most bar and grill restaurants offer a basic garden salad and are willing to add grilled chicken if requested.

n Ask about salad dressing options and choose light or fat-free op- tions. If none are available, select a vinaigrette.

n Modify sandwich options to make healthier by omitting cheese and bacon and by selecting mustard instead of mayo.

n Avoid dishes that have the words “crunchy” or “crispy” in the name. This usually means fried. Look for “baked,” “grilled,” “blackened,” or “roasted” instead.

232 The Wall Street Diet Salad Bar Tips and Recipes

salad bar can be an oasis of healthy eating or a fat trap. Many offices (as well as local delis and restaurants, of course) have extensive salad A bars, and sometimes it’s confusing to know how to fill your bowl. Here are the Wall Street steps to building a healthy, delicious salad:

n Choose the darker greens. They’re more nutritious. But if go- ing dark deters you from having a salad at all, it is OK to pick a lighter lettuce.

n Go for the smaller-sized greens. This will prevent you from adding too many ingredients.

n Pick a protein. Make sure it is grilled and not breaded. Best choices are: grilled chicken, roasted or fresh turkey, dry tuna (packed in water), shrimp, tofu (non-marinated), grilled steak (good for a change once a week), ham. Virgin Dieters or those who have over thirty pounds to lose can ask for a double portion of protein.

n Pick your veggies. Choose three non-starchy, non-marinated raw veggies. Choose from our list of veggies on the Wall Street Template (page 50).

n Skip the following: corn, beans, peas, chickpeas, roasted pep- pers, marinated mushrooms, caramelized onions, croutons, fried noodles, tortilla strips, sunflower seeds, dried fruit, candied nuts, potato/pasta salad, tuna/chicken salad made with mayo, full-fat dressing. n Virgin Dieters or those who have more than thirty pounds to lose can add one small amount of optional fat such as ol- ives, raw sliced almonds, sliced avocado, shredded cheese/ mozzarella/feta.

n Pick a dressing. Go for the light or low-fat balsamic if available. Use only one ladle. You can always add extra balsamic or red wine vinegar. If you don’t like balsamic, you can go for another light or low-fat dressing, but really go easy on these, half a ladle, because the calories can still add up. You can also mix your own dressing of balsamic vinegar, olive oil (go easy on this), and Di- jon mustard.

n Add a healthy crunch. Crumble up two Fiber Rich crackers for a little fiber and crunch.

hain restaurants are a fact of life. Many of us shun them because we think that they’ve got nothing on the menu that would be both C tasty and healthy. (Of course some of us do the drive-through on the sly, but that’s another matter!) The good news is that more of the chains are offering healthy choices. If you know what to pick, you can find a good low-calorie meal at a chain. This is important if you’re traveling, in a rush, or ferrying the kids. Here is a good selection of national chains with their best and worst picks. You should know that all calorie data we’ve provided is from the chains themselves. We have to hope that they are correct. (Is it really possible that Panda Garden’s Kung Pao Shrimp has only 240 calories? They say so.) You can always check their websites so you can find updates and further information if you’re interested. A few notes on choosing chain meals: We did list soup options, but individuals who are salt-sensitive must be aware of the sodium and should probably not choose a soup. If you are not salt-sensitive, you can always pick the soup and a veggie side and call it a meal. If the soup

* Please note: not all choices are available in every outlet. has a Juicy Carb (like beans) in it and there is no other protein in the meal, then you do not need to count it as a Juicy Carb for the day. If you choose the soup and a main dish with protein, then the soup becomes your Juicy Carb. Where or burgers are offered, you can al- ways skip the bread (saving you a Juicy Carb) and request a house salad with dressing on the side (pick the lightest dressing available).

National and International Airport Terminal Food Options 295 Airline Meals

etting nutritional information from the airlines about their meals is an ex- ercise in frustration. Most are far from forthcoming about what they’re G serving you in the air. Some don’t seem to have any nutritional informa- tion at all; others don’t want to share it. We did the best we could and have been able to come up with some good general recommendations on what to choose on your flight. Keep in mind that the airlines offer varying meals regionally and that they change them regularly so that an entrée offered in May might be off the menu in August. And a meal on a flight from Denver may not be offered on a flight from Boston. Some general guidelines for flying Wall Streeters: for most airlines, you can call ahead and pick a low-calorie, low-fat, or low- cholesterol meal, if a meal is served. You can also call or check the airline website to find out if a meal will be served, or just snacks. In first class and business class, meals are typically served, but you need to steer clear of Dry Carbs, salty nuts, salty drinks. If you eat just the protein, veggies, and fruit, the meal itself can be nutritious. You may want to bring along snacks on your trip. You should make your choices based on what kind of eater you are: a Controlled Eater or a Clean Plate Clubber. See the travel chapter, page 144, for more details on this. Airlines are all domestic and are in alphabetical order.

American Airlines

American sells snacks and meals. On flights over three hours your breakfast option is a breakfast bagel sandwich. You can take out the turkey and cheese and have it with Dijonnaise mustard and eat half the bagel (about 330 calories), but you have to be a good deconstructor and a Controlled Eater. If you ate the bagel as it is served with the mustard, it would be about 470 calories. On flights over three hours in the afternoon or evening there is also an Asian chicken salad served without the dressing for around 360 calories. There are individual snacks offered, but all are between 300 and 860 calories, so best to skip.

Note: These calorie counts are just estimates, as portion sizes are not available for the meals.

IndiviDual Snacks Available on American Airlines ($3 each)

n Great Nut Supply (4 oz) (650–700 calories, 170 calories/oz)

n Mega Bite Cookie (4 oz) (250–300 calories)

n M&M’s (5.3 oz) (730 calories, 138 calories/oz)

n 3 Musketeers (300 calories)

Examples of Fresh Light Meals Available for $5

n Breakfast Bagel Sandwich (plain bagel [260], slices of roasted tur- key breast [80], mild Muenster cheese [100], side of mayonnaise [150], Dijonnaise mustard [25]) (estimated 600 calories with mayo, estimated 470 calories with mustard)

n Asian Chicken Salad (Romaine lettuce [16], napa cabbage [13], grilled chicken [120], water chestnuts [60], red peppers [20], mandarin oranges [40], slivered almonds [100], oriental sesame dressing on side [140]) (estimated 500 calories with dressing, es- timated 360 calories without dressing)

Continental Airlines

Continental is the only airline that serves meals at meal times on flights longer than two hours. Meal includes a sandwich—smoked turkey, oven roasted turkey, roast beef, or ham and cheese—on freshly baked white or wheat rolls, and a sweet item (Almond Delight, Smores Russell Stover, Pecan Delight), with either carrot sticks or chips. The sandwiches are all pretty plain and add up to about 200 calories. Skip the chocolate bar, peanuts, and pretzels, and enjoy the carrots.

Cold Sandwich

n Turkey sandwich (2 slices Jennie’O Smoked Turkey Breast [1.4 oz, 40 calories], small greenleaf lettuce leaf [5], 1.5-oz French petit pain roll [90], 1 packet of Hellmann’s Light Mayo [35]) (170 calories total)

Delta Air Lines

On flights between 1.5 and 3.5 hours you’ll find a Snack Basket. Your best bet is a Quaker granola bar. On longer flights, over 3.5 hours, there is a snack that is suitable only for Controlled Eaters (I speak from expe- rience here: I ate it all!). Pick the cheese spread and cranberry/golden raisin mix (skip the crackers and cookie).

They have a few snack choices, including hundred-calorie packs of Wheat Thins. For those who are protein-starved, go for the all-nuts cashew halves, 170 calories. They give you only one snack at a time, so this may be a good choice for Controlled Eaters and Clean Plate Clubbers who love plane food and come empty-handed. But take only one!

United Airlines

On flights over three hours, United has snack choice boxes that have some healthy options, but they range from 560 to 895 calories (the highest-calorie one being trans-fat-free and vegetarian) if you eat eve-

300 The Wall Street Diet rything in the box. If you end up with a box in front of you, I would pick two choices and make it a protein and look for a fruit (cheese and applesauce, or tuna and raisins, or double up on the protein with cheese and beef jerky). They also have a wrap/sandwich/turkey salad option, but you need to deconstruct the sandwich—eating just the protein—or in the salad, pick out the lettuce, turkey, approved veggies, and have some fruit on the side. You basically have to be a Controlled Eater in this situation and good at navigating your way though each possibility to make the healthiest choice. If you are not a good deconstructor, the best choice would be the turkey wrap at 425 calories (call it your Juicy Carb for the day). Total calories: Smartpack, 895; Minimeal, 560; Quickpick, 735; Ritebite, 625. Cost: $5 per box.

S e a s o n i n g s Many of my clients love to grill in the summer and ask for recommen- dations on grills and marinades, and that’s why I include the Williams- Sonoma Grilling Rub. 312 The Wall Street Diet Soups

Check the serving size on the soup container. If you’re a CPCer, Trader Joe’s or Tabatchnick’s are good choices because they come in individual servings. If you’re salt-sensitive, either because of high blood pressure or because you tend to bloat, then choose low-sodium soups. If the soup has beans, lentils, corn, potato, squash, peas, or barley, you must count it as a Juicy Carb. The exception is that beans/lentils count as protein if they’re the only protein in meal.

In general, for lunch you should choose a frozen meal that’s less than 280 calories for women and 300 calories for men. For dinner, choose an entrée that’s less than 380 for women and less than 400 for men. If you’re eating late, say after 9 p.m., it’s best to choose a dinner that’s very low in calories. For example, Amy’s Mexican Tamale Pie is just 150 calories. This is a good late-dinner choice. I like Amy’s brand because they’re or- ganic and they taste great. All frozen meals count as a Juicy Carb.

Veggie Burgers/Meat-ree PrODuCts In general, you should keep to the portion size listed on the package for these items. The exception is with veggie burgers as most people are not satisfied with one and really need two. This is fine if each burger is less than 120 calories. Amy’s Veggie Burgers are higher in calories, so if you choose them, keep it to one burger.
