THe tHree-dimensional structure of TFA is more similar to saturated fatty acids tHan to regular unsaturated fatty acids, wHicH Have tHeir double bond in the cis configuration. THe trans configuration substantially alters the pHysical properties of the fatty acids and tHus, the properties of tHe oil containing tHese TFA for cooking and food manufacturing. Also, it substantially alters the biologic and Health effects of the fatty acids when consumed [1]. A positive linear trend between TFA intake and total as well as LDL cHolesterol concentration was establisHed, whicH links elevated TFA in blood witH increased risk of coronary heart diseases. International expert groups and public Health authorities recommend consumption of TFA (artificial and ruminant) of less tHan 1% of total energy intake, wHicH translates to 2.2 g/day with a 2,000 calorie diet. Elimination of industrially-produced TFA from the global food supply by 2023 is a World Health Organization (WHO) flagship priority [2, 3]. Estimating tHe extent of TFA exposure in tHe population has been hampered by the lack of an accurate and compreHensive database on wHicH to derive tHe data and tHe trend towards tHe reformulation of products over tHe past decade to reduce levels. THis later issue complicates analysis of Historical food intake data. Additionally, tHe variability in tHe TFA content of foods within a food category is extensive and can introduce substantial error when the calculations TRANS FATTY ACIDS IN HUMAN SERUM OR PLASMA Page 5 of 49 are based on food frequency questionnaires that heavily rely on the grouping of similar foods. FurtHermore, TFA intake data is unknown in most low- and middle-income countries, and tHe few surveys that exist are old and may not be nationally representative. The lack of sucH data and tHe uncertainties associated witH indirect exposure assessments tHrough questionnaires created tHe need for biomonitoring data that describe exposure of the population to TFA. Over 10 different TFA were identified in foods sucH as milk and margarine, with monounsaturated octadecenoic acid (C18:1) isomers representing over 80% of total trans fats in ruminant fats and partially hydrogenated vegetable oils. Partially Hydrogenated vegetable oils sHow a more even distribution of tHe different trans C18:1 isomers than dairy fats. In partially hydrogenated vegetable oils, elaidic acid (C18:1n-9t) is one major TFA while in dairy fats vaccenic acid (C18:1n-7t) is

Eicosanoids and related fatty acid derivatives can be formed from arachidonic acid and other polyenoic fatty acids via the cyclooxygenase and lipoxygenase pathways generating a variety of pro- and anti-inflammatory mediators, such as prostaglandins, leukotrienes, lipoxins, resolvins and others. The cytochrome P450 pathway leads to the formation of hydroxy fatty acids, such as 20-hydroxyeicosatetraenoic acid, and epoxy eicosanoids. Free radical reactions induced by reactive oxygen and/or nitrogen free radical species lead to oxygenated lipids such as isoprostanes or isolevuglandins which also exhibit pro-inflammatory activities. Eicosanoids and their metabolites play fundamental endocrine, autocrine and paracrine roles in both physiological and pathological signaling in various diseases. These molecules induce various unsaturated fatty acid dependent signaling pathways that influence crosstalk, alter cell–cell interactions, and result in a wide spectrum of cellular dysfunctions including those of the tissue microenvironment.

When necessary silica gel thin-layer chromatography (analytical) was performed on Merck silica gel 60 plates (0.25 mm thickness, Merck KGaA, Germany) and the spots were detected by spraying the plate with cerium ammonium sulfate/ammonium molybdate reagent. Fatty acid methyl esters were analyzed by GC (Agilent 6850, Milan) equipped with a 60m × 0.25mm × 0.25μm (50%-cyanopropyl)-methylpolysiloxane column (DB23, Agilent, USA), and a flame ionization detector with the following oven program: temperature started from 165 °C, held for 3 min, followed by an increase of 1 °C/min up to 195 °C, held for 40 min, followed by a second increase of 10 °C/min up to 240 °C, and held for 10 min.

The properties of fatty acids in bile salt solution were defined in terms of their saturation ratio, and of the critical micellar concentration of bile , on salt for each fatty acid as solute. The partition of fatty acids between the oil phase and the micellar phase of the dispersions was defined as the distribution coefficient K M/O. Two standard portion factors used in the calculation of nutrient are included in the data sets. Variable Description PSF Portion Standard Factor APSF a Alcohol Portion Standard Factor Sources of nutrient data Values for most nutrients are based on the Australian food composition data base, NUTTAB95.1 Nutrient values form other sources are listed below. None of these new values have been tested or validated so the CCV recommend that the values be used with caution; the CCV welcome any feedback. o Folate (Folate) and vitamin E (VitE) are derived from British food composition tables.2 o Alpha-Carotene (AlphCarot), Beta-Carotene (Bet_Carot), Beta-Cryptoxanthin (BetaCrypt), Lutein plus Zeaxanthin (LutnZeax) and Lycopene (Lycopene) are derived from the USDA data base3 and are measured in micrograms/day. o Glycemic index (GlycIndex ) and glycemic load (GlycLoad) are derived from an international table.4 Note that the variable Bet_Carot measures total ß-carotene intake, and should not be confused with the variable BetaCarot which estimates ß-carotene equivalents (mcg/day) from NUTTAB and is calculated as the sum of the ß-carotene and half the amounts of - carotene and - and ß-cryptoxanthins present. Although values for the 2 variables are likely to be highly correlated, values may differ to a large extent, having been estimated from different databases, developed at different times in different countries. Also different foods would have been averaged to match values with the DQES items. Hodge at al have described the derivation of values for Glycemic index (GI) and glycemic load (GL) as follows:5 ‘Glycemic index is a method of ranking foods on the basis of the blood glucose response to a given amount of carbohydrate from that food.

Abstrak Komponen volatil merupakan kelompok senyawa-senyawa volatil yang berpengaruh terhadap karakteristik flavor komoditas dan penerimaannya secara keseluruhan oleh konsumen karena pengaruhnya terhadap karakteristik aroma. Tujuan dari penelitian ini ialah untuk mengidentifikasi komposisi senyawa- senyawa volatil, profil asam amino dan asam lemak salah satu jenis ikan budidaya air tawar khas Jawa Barat yaitu ikan gurame dalam kondisi segar dan kukus. Metode ekstraksi sampel Solid Phase Micro Extraction dilakukan dengan suhu ekstraksi 40oC untuk sampel segar dan 80oC untuk sampel kukus selama 45 menit kemudian senyawa volatil dideteksi dan diidentifikasi menggunakan Gas Chromatography/Mass Spectrometry. Analisis pendukung lain yang dilakukan ialah analisis profil asam amino dan profil asam lemak menggunakan High Performance Liquid Chromatography. Senyawa volatil pada sampel ikan gurame segar yang terdeteksi ialah 17 senyawa sedangkan pada hasil pengukusannya sebanyak 38 senyawa. Asam amino yang terkandung lebih tinggi untuk sampel ikan gurame segar dan kukus ialah asam glutamat (3,12%, 4,09%).

In Uganda, antiretroviral therapy (ART) has drastically reduced perinatal human immunodeficiency virus (HIV) infection of infants, however, the interplay of FAs, ART, and HIV in relation to child growth is not well understood. To investigate this, serum was collected from 240 children between 6–10 years old in Uganda and analyzed for FAs using gas-chromatography mass-spectrometry.
