In broyage cocoa nibs are ground by revolving granite blocks, repeatedly crushed to create a warm, thick syrup known as cocoa liquor. This liquid chocolate is dark, gritty and still very bitter, comprising of fine particles suspended in cocoa butter.

Known as the purest form of chocolate, cocoa liquor is further processed through refining, aerating, mixing and tempering to develop a rich flavour and wonderfully smooth texture.
