Internationales Kochbuch 1 2 ´´We are the same in our differences`` Peer-Leader-International 3 Introduction Recently I spoke with an old lady. She was complaining that in her town she cannot find a single German restaurant any more. She is nearly right. Even 220 km around villages you find snack bars or restaurants from minimum 10 countries: from Greece, Turkey, US, Italy, Croatia China etc. People cook German food at home. It means Globalisation at its best: Take the best of all cultures, enjoy diversity without cutting your roots. Recently we were in a seminar in Bosnia with German Peers. They served Polenta, a maize-meal. Our people did not know it and I suggested they were spoiled by Hamburgers and Pizza-culture. I asked them about their favourite meals and I was surprised: very local one, Mama`s kitchen. The ingredients come from all over the world and they are seen as being “local”: the coffee, the tea, chocolate, Coke….It`s OK. But is NOT OK, that we in Europe want to have everything from everywhere anytime. Strawberries in winter come from industrial agriculture, some potatoes come via airplane from Egypt. It is more clever to use seasonal products, local products, fair-trade products, healthy stuff. Therefore we tried to understand questions of international food-industry, climate change, fair-trade campaigns etc. Since 2015 we had a lot of new young people around us: from Syria, Afghanistan, from Iraq. They did not speak German, but we tried to find out about their culture and their favourites including food. They told us and we started to cook with them, to understand, to enjoy. Katlego then collected stories and created this CookBook. Welcome in Germany. Let us discover new things. Let`s cook! Copying recommended. 4 Vorwort Kürzlich sprach ich mit einer alten Dame, die sich beklagte, dass es kaum noch deutsche Restaurants gebe. Sie hat Recht: Selbst in der tiefsten Provinz findet man in Deutschland im Umkreis von 20 Kilometern Angebote aus mindestens 10 verschiedenen Ländern: Garantiert gibt es „den Chinesen“, den Döner-Mann, die Pizzeria, das „Restaurant Zagreb“, „den Türken“, “den Griechen“, McDoof“ usw. Deutsch wird zu Hause gekocht. Das ist die Folge von Globalisierung in bester Form: Das Beste aus allen Kulturen mitnehmen, Vielfalt genießen, ohne die Wurzeln zu verlieren. Daraus entstehen oft neue Erfindungen, auch beim Essen: Pizza mit Pommes, Spaghetti mit Spinat, Pfannkuchen mit Gemüse…. Als wir mit deutschen Peers vor einiger Zeit zu Gast in Bosnien waren, gab es Polenta. Niemand kannte es, es schmeckte fremd, die Schüssel blieb voll. Ich vermutete bei unseren Leuten einen verwöhnten Hamburger-Geschmack: McDoof. Genaue Nachfrage aber ergab, dass jeder ein anderes Lieblingsgericht hatte, nämlich eins von Mama. Dazu gehörten Stampfkartoffeln oder Gulasch, Pfannkuchen oder Grünkohl. Sehr lokal. Die Zutaten kommen aus aller Welt und werden heimisch: Die deutsche Kartoffel kommt aus Südamerika, der ostfriesische Tee aus Indien, Milka-Schokolade aus Ghana, Linsensuppe aus Nahost. Das ist gut so. Nicht so clever ist, ALLES, IMMER, ÜBERALL und BILLIG zu wollen. Es muss nicht im Januar die südspanische Gewächshaus-Erdbeere auf dem Tisch sein und die Bio-Kartoffel aus Ägypten einzufliegen, ist eben NICHT bio. REGIONAL ist klug, SAISONAL bringt Abwechslung, BIO garantiert Gesundheit und gesunde Zukunft und FAIR sichert das Einkommen der Menschen auch im Süden. Deshalb waren die Teams auch unterwegs auf Märkten, im Klimahaus (www.klimahaus-bremerhaven.de ), im Energie-Zentrum in Aurich (www.eez-aurich.de ), im Gewürzmuseum in Hamburg (www.spicys.de ), waren im Netz unterwegs (www.fairtrade- deutschland.de , www.fairtrade.org ). 5 Als wir nun seit Herbst 2015 viele junge Menschen aus Syrien, dem Irak, aus Afghanistan in unseren Ort bekamen, die nicht so gut deutsch konnten, suchten wir den Kontakt und waren neugierig. Wir ließen uns erklären, welche Musik, welcher Tanz, welches Essen sie lieben. So entstand die Idee dieses CookBooks, das von KG (KäiDschi = Katlego Selokelo, Peer-Leader aus Winterveldt in Südafrika) liebevoll zusammengestellt wurde. Erzähl mir deine Geschichte, zeig mir deine Lieblingsspeise! Lass uns zusammen kochen und noch mehr Neues entdecken. Welcome in Germany! Nachmachen empfohlen! IssWas ist eine mobile Snack-Bar, bei Bedarf auch mit „homemade eco-electricity“ versorgt. 6 7 PREFACE • A tale of taste is a collection of different dishes from other international countries and homemade dishes and understanding the stories behind these special dishes. • Everybody has that special food or dish that immediately takes them back to a certain person or time, that is what this cook book is about, getting the insights of these personal stories, sharing these receipts, how are they made and understanding what makes them special. • This cookbook is initially created with love and passion for cooking, engaging and learning by our young volunteers to share their traditions and the love for the kitchen. • Participants in this cookbook share their homemade receipts passed down through generations and we hope through this book we will be able to commemorate and pass these experiences to others. 8 VORWORT • Das Buch ist eine Sammlung verschiedener hausgemachter Gerichte aus verschiedenen Ländern und von Geschichten hinter diesen speziellen Gerichten. • Jeder hat dieses spezielle Essen oder Gericht, das ihn sofort zu einer bestimmten Person oder Zeit zurückbringt. This book is to capture your imagination as a reader, it should make you feel like you are part of a different time or place through personal insides shared in this book. Understanding - their stories about their kitchens that they had and have, - gardens, preserving or food storages, - how meals were served - people who motivated in the kitchen. Participants share their favorite receipts methods and ingredients. Get to know the origin of ingredients used in their receipts. 12 ERWARTUNG Dieses Buch wird Sie als Leser inspirieren, Ihre Wissen über andere Kulturen zu überdenken, vielleicht Werte zu verändern und etwas Neues auszuprobieren. Dieses Buch soll Ihre Phantasie als Leser erfassen, soll Ihnen das Gefühl geben, Teil einer anderen Zeit oder anderer Kulturen zu sein, die in diesem Buch geteilt werden. Vielleicht gibt es nach der Lektüre - etwas mehr Verständnis zu den verschiedenen nationalen Küchen und den „Inhalten“ heutigen Gärten, Speisekammern oder Lebensmittelläden, - etwas mehr Einblick, wie Mahlzeiten serviert werden / wurden und - wie Menschen in der Küche motiviert wurden. Die Teilnehmer teilen mit Ihnen ihre bevorzugten Zubereitungsweisen und Zutaten. Lernen Sie die Herkunft der Zutaten kennen, die in den Rezepten verwendet werden. 13 The idea behind the book The idea of this cook book came from the founder of Peer-Leader-International Mr. Harald Kleem and he got the motivation from one of the projects called IssWas. The young volunteers behind this book they may not be professional chefs but with all the projects we have done as an organization we have seen how their knowledge and skills have increased significantly during the course and many of them reported that they have made a positive change as a results of what they have learned in our project. We have seen the kind of passion they have for food through events that were hosted by the Peer-Leader- International when they are invited to cook, and also the feedback from the local community was very positive. IssWas is a cooking project from Peer-Leader-International. When we have events or seminars this project is responsible for cooking, the team consists of 18 young members with the help of Dörthe, Antje, and Shahram. Young participants we work with for now are from Germany, Syria, Iraq, South Africa, Afghanistan, and we would like to expand to reach out to more countries. The concept of this project to make a reader be able to - identify given ingredients, their origin and history - learn basic cooking terminology, with special regards to the different cultures explored - understand the role that food plays in each culture - cook basic ethnic meals - work with other group members to further progress in learning - understand personal stories and to get innovative ideas from a different perspective. 14 Die Idee hinter diesem Kochbuch Die Idee für dieses Kochbuch kam von dem Gründer von Peer-Leader-International, Harald Kleem. Er selbst wurde motiviert von einem der Peer-Leader-Projekte namens „IssWas“. Die jungen Freiwilligen hinter diesem Buch können nicht professionelle Köche sein, aber mit allen Projekten, die wir als Organisation gemacht haben, haben wir gesehen, wie ihre Kenntnisse und Fähigkeiten während des Kurses deutlich zugenommen haben.

    Before I go… Posted on June 5, 2016 by onyxandsand 6 am I woke up this morning determined. I pushed past the sleepiness, exhaustion, and anxiety and put on my workout clothes. I was not letting a beautiful 70 degree sunshine-filled day go to waste. I grabbed my new camera and set off into the calm and quiet morning. The streets were not yet bustling with late employees, so honking was at a minimum, I walked lengths upwards the usual trek to a monastery near my parents home. It’s a place I go to in order to receive the maximum amount of unity between nature and spirituality, two things I consider great treasures. The monastery is a convenient walk and my mom, sister, and I usually go whenever I used to live at home. But today, I went on my own to deal with my personal issues. I am leaving this country for the first time in my life, and to a place that isn’t necessarily the first you’d think of for a new traveller. Amman, Jordan is located right under Syria, beside Israel, and not too far from Egypt. And if you have been monitoring a screen the past year, the issue of ISIS persists and there are refugees flooding nearby countries in order to seek asylum. I know I am only going for an intensive Arabic immersion program, however, I know that with an opportunity like this there is mounting pressure on me to do above and beyond what I am actually going for.

Arabic is an abjad orthography and is morphologically similar to Hebrew. However, Arabic literacy occurs in a diglossic context, and its orthography is more visually complex than Hebrew. We therefore tested to see whether hemispheric differences will be similar or different from previous findings in Hebrew. We also tested whether phonological recoding is a mandatory stage in reading Arabic. We used a divided visual field paradigm, where 32 participants performed semantic decisions on pairs of words in which the first word (presented centrally) was either a homophone (bank), heterophone (tear), or unambiguous. The second word was presented in the left, right, or central visual field. The results revealed larger effects of ambiguity for heterophones than for homophones in all conditions, and thus support the contention that phonological recoding is mandatory in reading Arabic. Hemispheric patterns were different from those found with Hebrew, and were similar in the peripheral visual fields, which can be interpreted as indicating a single processor, with the pattern indicating that this processor is the LH. The alternative hypothesis is that interhemispheric integration occurs in all conditions. The implications of these results for reading in Arabic are discussed. Despite their similarities, there are considerable differences in climate and culture, so that the term is not particularly useful. It has also been influenced to a degree by the cuisines of Turkey, Pakistan, Iran, India, the Berbers and other cultures of the peoples of the region before the cultural Arabization brought by genealogical Arabians during the Arabian Muslim conquests. HISTORY Originally, the Arabs of the Arabian Peninsula relied heavily on a diet of dates, wheat, barley, rice and meat, with little variety, with a heavy emphasis on yogurt products, such as labneh (yoghurt without butterfat). As the indigenous Semitic people of the peninsula wandered, so did their tastes and favored ingredients. There is a strong emphasis on the following items in Arabian cuisine: 1. Meat: lamb and chicken are the most used, beef and camel are also used to a lesser degree, other poultry is used in some regions, and, in coastal areas, fish. Pork is not commonly eaten--for Muslim Arabs, it is both a cultural taboo as well as being prohibited under Islamic law; many Christian Arabs also avoid pork as they have never acquired a taste for it.
