Grilled Margarita Pork Ribs Grilled Margarita Pork Ribs Source: Bob and Robin Young, both recipes adapted from several sources Ingredients - Ribs: 6 lbs KC Style Pork Ribs or Spare Ribs Ingredients - Brine: 1 c Water 1 c Tequila The juice of two Limes 4 T Triple Sec liqueur 4 T Coarse Sea Salt 2 T Honey, Tupelo if you can find it ½ t Cayenne Pepper 1 T Orange Zest Juice of 1 Orange Directions - Brine: Mix all the ingredients in a non-reactive bowl. Blend well. Marinade the ribs in the brine for two hours. Directions - Grilling: Cook indirect on the grill at about 300 º f. They will take about 3 ½ - 4 hours to grill. OR 3-2 ½-1 Method: 3 hours of smoking unwrapped at 225 º f flesh side up - lid closed, vents wide open - 3 chunks of dry seasoned hardwood/fruitwood such as: cherry, oak, apple, hickory, pecan, peach or a combination of wood -, followed by 2 ½ hours of cooking on the grill at 225 º f flesh side down wrapped in foil with a little liquid, such as Apple Cider, Bacon fat, Bourbon, Soda or Apricot preserves, butter and honey, followed by 1 hour of cooking unwrapped at a higher temperature - 250º f - 275 º f, with a generous basting of barbecue sauce, if desired KC Style Pork Rib Rub Ingredients: ½ c packed Brown Sugar 2 t Onion Powder 1 T Sea Salt 1 T Garlic Powder ¼ c Sweet Paprika 2 T Allspice 2 t ground Black Pepper 2 t Mustard Powder 1 t Chili Powder ½ t Cayenne, optional Directions: Blend all ingredients in a bowl. Place in an air tight container. Season your pork rib slab with a generous amount of the Kansas City Style Rib Rub a couple of hours before grilling as above. Let the slabs rest at room temperature during that time. .

Ingredients 2 racks of Heritage St. Louis Spareribs 2 tbsp yellow mustard Big Green Egg Sweet & Smoky Seasoning 1 cup apple cider vinegar 1 cup water Big Green Egg Sweet & Smoky Kansas City Style Barbecue Sauce Equipment Water bottle Big Green Egg Apple Chunks Cast Iron Sauce Pot with Basting Brush, optional Method Set the EGG for indirect cooking with a convEGGtor at 250°F/121°C with apple chunks. Remove the membrane from the bone side of the ribs and remove any excess fat. Lightly coat both sides of the ribs with the yellow mustard. Season liberally with the Big Green Egg Sweet & Smoky Seasoning. Let the ribs rest for 15 minutes before placing on the EGG. While the ribs are resting, mix the apple cider vinegar and the water in the water bottle and set aside. After resting, place the ribs on the grid and cook for 2 hours. Spritz the ribs with the apple cider vinegar and water mixture. Repeat this process every 30 to 45 minutes for 5-6 hours. Once the internal temperature of the ribs reaches 195-200°F/ 91-93°C, baste the ribs with the Sweet & Smoky Kansas City Style Barbecue Sauce. Cook for another 15 minutes or until the sauce has caramelized. Remove the ribs from the EGG once the meat is probe tender. Cut between the bones and serve with extra barbeque sauce. Enjoy! Tip: The bend test is another way to tell ribs are ready.

    Korean Bulgogi Tacos I like to watch Diners Drive Ins and Dives. Its fun to see the different foods being served all around the county and I enjoy the show. I was watching it a few weeks ago and Guy was in Florida at a food truck. The owner of the truck made a Korean BBQ taco that looked really good. It was fresh and the recipe was easy, so I made it for myself. Twice actually. The second time was better when I made it for a group of friends and family on Super Bowl Sunday. The recipe is pretty straightforward but on my second go I made some changes that I think improved upon the original. The first big change was the meat I used. The recipe calls for short rib meat off the bone. This meat is used in Korean BBQ a lot, but it was too tough for me (maybe I just don't know how to cook it). So the second time I made this I used skirt steak instead and it was perfect. I cooked the meat on the BBQ (not the flat top) as I like the char and flavor. If you BBQ, you need your BBQ to be really hot so the meat caramelizes. When you grill the meat, don't mess with it, leave it on the grill and flip it once only. I chose to grill the skirt steak in one piece and slice it after I pulled it off the BBQ. This was easier for me as I was cooking a lot of meat.
