South Indian Cuisine
SOUTH INDIAN CUISINE South Indian Cuisine is a term used to refer to the cuisines found in the four southern states of India, namely Andhra Pradesh, Karnataka, Kerala and Tamil Nadu. As opposed to North Indian cuisine, there is limited use of garam masala and other dried spices except cardamom, black pepper and turmeric. South Indian cuisine is rice based. Rice is combined with lentils to make wonderful dosas, idlis, vadas and uttapams. These items are glorious and delicious besides being nourishing and digestible (due to the fermenting process). They are combined with sambhar (dal), rasam (tamarind dal), dry and curried vegetable and pachadi (yogurt). Their rice preparations are also masterpieces like biryani from Hyderabad, lemon rice and rice seasoned with coconut peanuts, tamarind, chilies, curry leaves, urad dal and fenugreek seeds. South Indian chutneys are made of tamarind, coconut, peanuts, dal, fenugreek seeds, and cilantro. Meals are followed by coffee. South Indian dals and curries are more soupy than North Indian dals and curries. South Indian cuisine is also hotter. Coconut milk straight from the nut is a common beverage and sight in South India. Coffee is very popular in South India and Madras coffee is popular in South Indian restaurants throughout the world. The South Indian food is a brilliant blend of flavors, colors, seasoning, nutritional balance, fragrance, taste, and visual appeal. PARIMARAL - THE SOUTH INDIAN TRADITION OF SERVING A TRADITIONAL MEAL A typical traditional meal in South India is served on a "Vazhaillai", a freshly cut plantain leaf. The Sappad or food that is served on a banana leaf (even the size of the leaf varies from one community to another) is displayed like an identity card. -

Curry • “Curry” does not necessarily mean it contains curry powder. • A generic term referring to a wide variety of dishes • Their common feature is the incorporation of more or less complex combinations of spices and/or herbs, usually (but not invariably) including fresh or dried hot chillies. Curry pastes contain aromatic spices and some contain curry or tumeric and some do not. Actually only the yellow curry paste contains “curry”. It gets its golden color from the ground turmeric mixed with dried red chili peppers. The green curry paste contains Thai green chili peppers. The red curry paste contains red chili peppers. Both the green and yellow contain cumin, but that is not the same as curcumin . Curry Chicken Breast with Tomato and Coconut Milk This savory and slightly sweet dish is a great introduction to Indian cuisine Ingredients 2 tablespoons extra virgin olive oil 1 small red onion, cut in half lengthwise and thinly sliced 4 medium cloves garlic, minced 2 lengthwise slices fresh ginger (each 2 ½ inches long, 1 inch wide, and 1/8 inch thick), cut into matchstick strips (julienne) 1 ½ pound boneless, skinless chicken breasts, cut into 1-inch pieces 2 teaspoons Madras Curry Powder (contains coriander, cumin, mustard seeds, cloves, fenugreek, black peppercorns, red Thai or cayenne chiles, turmeric) 1 ½ teaspoons coarse sea salt ¼ cup unsweetened, light or regular coconut milk 1 large tomato, cored and finely chopped 2 tablespoons finely chopped fresh cilantro leaves and tender stems Directions 1. Preheat a wok, stainless steel skillet or well-seasoned cast-iron skillet over medium- high heat. Drizzle oil down its sides. Add onion, garlic, ginger, and stir-fry until the vegetables are lightly browned (3-5 minutes). 2. Add chicken pieces and the curry powder, and cook until the meat is seared all over, about 5 minutes. 3. Sprinkle the salt over the chicken and pour in the coconut milk, which will immediately come to a boil. Cover, lower the heat to medium, and simmer, stirring occasionally, until the chicken is fork-tender and no longer pink inside (5-7 minutes). Remove the chicken pieces from the thin yellow sauce and place them in a serving bowl. 4. Raise the heat to medium-high heat and boil the sauce, uncovered, stirring occasionally, until it thickens, 3-5 minutes. -

I wanted the whole shebang, and since starting my blog in 2010, I’ve acquired a massive catalogue of authentic and British-style recipes. Many made it into my first three cookbooks, whereas others had to be held back until the time was right. That time is now! I have also come across some good shortcuts, which are explained here as well. I’m happy to now give you The Curry Guy Bible: a collection of more than 160 of the most popular recipes from my first 3 books and 50 new mouthwatering recipes that will get you the results you’re looking for – and perhaps a few tasty surprises. I’ll warn you that some of my new recipes could be considered to be way out there and even unhealthy by some! Being a big believer that everything is fine in moderation, I couldn’t bring myself to give you watered-down versions of spectacular recipes. I have given you the most authentic versions, but you can easily adjust the recipes to your personal preferences – just read the following few pages for how to do this. -

Revelations mix your own SPICES v2 www.svRevelations.com Achaar Ka Masala Yield: 1 cup Masala, a ground spice mixture is perhaps the most common and the easiest way of using 1 tablespoon red chilly powder whole spices. It takes a little effort to combine spices at home and make a spice blend. In the multitude of spice mix, Achaar Ka Masala stands out for its bright color. 1 tablespoon turmeric powder 3 tablespoons mustard seeds (sarson) 1 tablespoon fennel seeds (saunf) In a heavy bottom pan dry roast the mustard seeds for 1 - 2 minutes. Transfer to a bowl. Next dry roast the fennel seeds till aroma is released, keep on stirring while roasting. 1 tablespoon fenugreek seeds (methi dana) Transfer to the same bowl as mustard seeds. 1 tablespoon carom seeds (ajwain) Similarly, dry roast fenugreek seeds, carom seeds and nigella seeds on by one. 2 teaspoons nigella seeds (kalonji) Add the roasted spices in a blender and grind to a coarse powder. Transfer the masala mix to a bowl. Add salt, amchur, red chili powder and turmeric powder. 1 tablespoon salt (or to taste) Stir to combine. Store the Achaar Masala in a clean, dry airtight jar at room temperature. Make sure to use dry spoon to scoop out the masala. Achaar Masala has a shelf life of more than 6 months if stored at ideal conditions. Adobo Seasoning Yield: 7 tablespoons Prep Time: 10 minutes 2 tablespoons salt This seasoning is used often in Mexican and Filipino dishes. 1 tablespoon paprika 2 teaspoons ground black pepper In a bowl, stir together the salt, paprika, black pepper, onion powder, oregano, cumin, garlic 1 1/2 teaspoons onion powder powder, and chili powder.
