Fillet steak with slow-cooked tomatoes, salsa Verde watercress The fillet is probably the nicest and most expensive cut of beef. It’s very lean and tender due to the short fibres in the meat. Salsa verde not only contains lots of vitamins, it also bursts with freshness from the herbs and savoury anchovies. With the slow-cooked tomatoes and watercress salad, this is a recipe that will have you looking forward to steak night. Remember to stick to no more than 1 tablespoon of balsamic vinegar per sitting. Ingredients-serves 4 . 4 x 100g fillet steaks For the slow-cooked tomatoes: . 520g/4 vine-ripened tomatoes or 16 . cherry tomatoes . 2 sprigs of fresh thyme . splash of balsamic vinegar . splash of olive oil . pinch of caster sugar . salt and freshly ground black pepper For the salsa verde: . 2 tsp white wine vinegar . 4–5 fresh basil sprigs, leaves only . handful of fresh flat-leaf parsley . 6g/2 tinned anchovy fillets, drained and finely chopped . 3 tsp capers . 100ml garlic-infused olive oil For the watercress salad: . 100g watercress . 4 tbsp olive oil . 1 tsp white wine vinegar . 1 tsp Dijon mustard . pinch of salt Method Preheat the oven to 120°C. To prepare the slow-cooked tomatoes, combine the thyme, vinegar, oil, sugar and seasoning and dip the tomatoes (still on the vine) into the mix, coating them completely. Place on a baking tray and gently roast them in the oven for 15–20 minutes. Heat a large frying pan over a high heat until it’s smoking hot, then brush with olive oil. -

Abstract: A litter of Squalus megalops consisting of two normal single embryos and one pair of monozygotic twin embryos was collected off southern Brazil in 1982. The single embryos were males with respectively total length (TL) of 167.1 and 173.3 mm, yolk-free body weight (YFBW) of 25.3 and 27.9 g, internal yolk weight (INTYW) of 1.3 and 2.3 g. The twin embryos were females with respectively TL of 144.1 and 146.0 mm, YFBW of 12.4 and 13.6 g, and INTYW of 0.7 and 0.6 g. The twins were conjoined by a thin cord of embryonic tissue with length of 36.0 mm and diameter of 1.5 mm, attached to the ventral body surface between the pectoral fin bases. All four embryos were similar in body proportions and in the relative weight of the internal yolk. The twins were normally conformed but their body weights were approximately half of those of the single embryos of the litter. This is explained from theory of embryonic development of the telolecithal lecitotrophic elasmobranch egg. -

Through a case study on procuring salmon by a hotel kitchen, the use of food products with different convenience grades is examined. The convenience grade of the fish bought (whole salmon, fillets or portions) determines where along the food chain filleting and/or portioning takes place and thus where food waste from cut-offs occurs. To reduce food waste, we propose purchasing filleted or portioned salmon rather than whole salmon. For both measures, effectiveness is calculated by looking at food waste reductions along the food chain, achieved by a better use of filleting and portioning cut-offs. Next, sustainability across the environmental, economic and social dimension is evaluated by calculating (a) avoided embodied environmental impacts and economic costs, (b) avoided food waste disposal environmental impacts and economic costs and (c) environmental, economic and social impacts and costs associated with implementing the measures. Purchasing fillets or portions instead of whole salmon leads to food waste reductions of 89% and 94%, respectively. The interventions further lead to net climate change impact savings − − along the salmon chain of 16% (fillets) and 18% (portions). -

Abstract: Transposable elements (TEs) represent a considerable fraction of eukaryotic genomes, thereby contributing to genome size, chromosomal rearrangements, and to the generation of new coding genes or regulatory elements. An increasing number of works have reported a link between the genomic abundance of TEs and the adaptation to specific environmental conditions. Diadromy represents a fascinating feature of fish, protagonists of migratory routes between marine and fresh- water for reproduction. In this work, we investigated the genomes of 24 fish species, including 15 teleosts with a migratory behaviour. The expected higher relative abundance of DNA transposons in ray-finned fish compared with the other fish groups was not confirmed by the analysis of the dataset considered. The relative contribution of different TE types in migratory ray-finned species did not show clear differences between oceanodromous and potamodromous fish. On the contrary, a remarkable relationship between migratory behaviour and the quantitative difference reported for short interspersed nuclear (retro)elements (SINEs) emerged from the comparison between anadro- mous and catadromous species, independently from their phylogenetic position. -

June 2019 Monthly Report The June monthly report makes for a lot of interesting reading with many activities taking place that kept the Rangers on their toes. The report provides the usual monthly compliance statistics including the discovery of snares, followed by a report back on the Voortrekkers annual visit, activities surround alien plant control and fuel load reduction, maintenance and some interesting wildlife highlights from the month. This report then details an alien biomass expo the Rangers attended, the very intriguing washout of a rare beaked whale and the Conservancy’s involvement therein, a conversation piece on Haworthia conservation and the release of a lesser Flamingo. The report is then concluded with the Capped Wheatear which features as this month’s monthly species profile. Of the 24 permits checked, 6 people (25%) failed to produce a valid permit and were issued a verbal warning. Snares On the 3rd of June the Rangers came across some very rudimentary snares whilst checking some of the woodcutting operations on Fransmanshoek. Old packing strapping was used to create snares and were found tied to the base of bushes with a simple noose knot made at the other end. -
