LOCAL NEWS Percy Taverner Park Officially Opened

Imagine a park named after an Editor’s note: This piece was originally ornithologist! Wednesday, September 24, 2015 when a small pocket park was dedicated by Councillor David Chernushenko to the memory of Percy Taverner, ornithologist, architect, and a former resident of the neighbourhood – Old Ottawa South. In the spring of 2015, the City planted a number of trees on Bank Street, including two in hot and dry places near Bank and Grove. Thanks to Camilla Amundsen, who volunteered to take on the responsibility of watering these trees, the trees are thriving. Of course, to water, Camilla needed a water supply. Our thanks go to Camilla and to local businesses - the Quickie Convenience and the Bridgehead Coffee Shop for allowing access to their water supply.

Co-operative is a hot word right now. There are retail co-operatives, housing co-operatives and farm share co-operatives. Co-operatives are autonomous associations, formed and directed by those that use their services: the co-op’s members. If you’re entirely unfamiliar with the model as it applies to schools, here are the nuts and bolts of how a co-op school works. Parents with children at the school own and operate the school on every level from the executive to the janitorial, with the teachers and the Executive Director being paid employees. This year’s production was a particularly special one, for it was presented as a tribute to a much beloved and unparalleled teacher, Jenny Paroli, who taught at Westboro Academy. Madame Jenny died this year very suddenly from cancer, and our shows were presented to raise money for the Terry Fox Foundation in her memory. Our play this year was a fitting tribute to this wonderful and joyous person. Autumn Chicken Stew

Peel and chop the carrots and onions. Dice the potatoes (large dice). Finely slice the bacon and place in a large casserole pan on a medium high heat with a few tablespoons of oil. Add the onions and carrots to the pan along with the thyme sprigs and bay leaves. Cook, stirring constantly for 5-10 minutes until caramel- ized. Remove from heat. Add more oil if necessary and sauté the mushrooms until golden brown. Remove from heat and set aside. Brown your chicken pieces (including the back bone) in the same casserole. Remove from heat and set aside. Deglaze your pan with the cider and vinegar. Allow the juices to reduce while stirring all the little bits off the bottom of the casse- role. Add the stock, chicken and aromatics (bacon, onions, herbs) back to the casserole (reserving the mushrooms and potatoes). Place in a 275 to 300 degree oven for 30 minutes. After 30 minutes, uncover your casserole, add the potatoes, and stir. Add more stock if necessary. Cover and return to the oven for another hour. Check your stew and if the chicken is starting to fall off the bone and the potatoes are tender, add the mushrooms and return to the oven for another 20-30 minutes. Remove from the oven and leave covered for 10 minutes. Serve with crusty bread and a tossed salad. THE OSCAR l NOVEMBER 2015 Page 31
