It was the culmination of a tenacious search for grape growing terroir to rival that of his native Bordeaux – but also the start of a new chapter in a winemaking story that has its roots in France in the early 1700s. Now son Ben – generation 10 – heads the winemaking team, firmly observing the central tenets of this young yet historic estate: respect for tradition, understanding of site and an open mind towards contemporary practices that shape wines that are ever more refined and delicious. The Dominique Portet winery is set in among the beautiful rolling vineyards of the Yarra Valley. It has a Mediterranean atmosphere and provides a window onto the workings of the vineyard and winery. AUDP0001-19 Sauvignon Blanc 2019 $ 53.00 Grape Variety: 100% Sauvignon Blanc Pale straw-yellow colour, youthful and bright. The nose shows a complex mix of guava, grapefruit, lime juice, and white flowers - quality oak is present, though quiet. It's a creamy and soft palate, edges softened by time in oak, remarkably approachable at this stage of its life. White nectarines and minerals, a faint bitter-oak note that lends sinew and interest. Cerebral and serious. 94 points – The Real Reviews AUDP0002-18 Fontaine Rosé 2018 TBA Grape Variety: 60% Shiraz, 5% Cabernet Sauvignon and 35% Merlot The wine is a pretty, light salmon pink in colour. It shows floral perfume and sweet, pretty red fruits on the nose, as well as a slight pepperiness. Merlot and Shiraz combine to give the palate a spicy red-berry intensity, while the Cabernet adds a suggestion of blackberries. It has a gentle, creamy mouthfeel, and fine natural acidity draws out the palate to a pleasing, aromatic finish. This is as refreshing, satisfying and moreish a rosé as you could. 96 points – James Halliday 90 points – James Suckling Gold – James Halliday Effective August 2020 5 DOMINIQUE PORTET Yarra Valley - Australia AUDP0003-18 Fontaine Cabernet Sauvignon 2018 $ 49.00 Grape Variety: 86% Cabernet Sauvignon, 6% Merlot, 5% Cabernet Franc, 2% Petit Verdot and 1% Malbec Grapes come from a range of warmer vineyards in the northern and southern end of the Yarra Valley. Soils are rocky and hungry, with a clay base and lots of broken sandstone. These north-facing sites are excellent for Cabernet that has clear, juicy, concentrated fruit with soft, silky tannins. 94 points – James Halliday 91 points James Suckling Gold/95 points – Yarra Valley Wine Show AUDP0004-16 Cabernet Sauvignon 2016 $ 88.00 Limited Quantity! Grape Variety: 95% Cabernet Sauvignon, 3% Malbec and 2% Merlot A layered and alluring on the nose, revealing beautiful vibrancy and bright fresh red fruit with red cherry. Underlying notes of dark berries, zesty blackcurrant and plum provide a lush intensity that is fragrant and delicate, complimented by savoury notes of cedar, liquorice and tobacco. Super fine, chalky tannins offering texture and body suggest this highly aromatic, elegant wine has decades ahead of it, despite the warm vintage. Its vivid palette of flavours ensure this wine is drinking exceptionally well now and will reward cellaring for many years to come, but why wait? 95 points – James Halliday 95 points – The Wine Front AUDP0005-17 Heathcote Shiraz 2017 $ 85.00 Grape Variety: 100% Shiraz 30% whole bunch, 70% whole berry, 15% new oak split between barriques and puncheons. The quality of Heathcote red wines has taken a battering with heat and drought over the past 10 years, so the cool '17 vintage came as a relief. The colour is great, and there's a savoury/spicy edge to the plum fruit. 94 points – James Halliday Effective August 2020 6 PENLEY ESTATE Coonawarra - Australia Est. 1988 Winemaker Kate Goodman, Lauren Hansen Vineyards 111 hectares In 1988 Kym, Ang and Bec Tolley joined forces to buy a block of land in Coonawarra and Penley Estate was underway, the amalgamation of a 5th generation wine family Penfold and Tolley. In 2015 Ang and Bec took full ownership of the company. They have made a number of changes, including general manager Michael Armstrong and, even more importantly, appointed Kate Goodman as winemaker. Behind the scenes Ang's husband David Paxton, one of Australia's foremost viticulturists, has been working as a consultant, with improvements in vineyard performance already evident. To create our contemporary Coonawarra wines, we’ve returned to traditional methods of viticulture. We’ve become down to earth (again), hands on and nurturing. It’s a gradual process, one that takes passion, commitment and a lot of hard work. The mark of a good vineyard is its balance – the consistency of the fruit, ripening at the same time.

    Silvaner subtle, shapely & stylish A RENDEZVOUS WITH TRADITION 3 THE STYLE OF SILVANER WINES Silvaner is one of the most important white grape varieties in German viticul- tural history. From its debut in Germany in the second half of the 17th century through the mid-1960s, it was the most widely planted grape variety in Germany. At its peak, it was cultivated in ca. half of Germany’s total vineyard area. It replaced inferior grape varieties, including Elbling and Gutedel, until it was supplanted by the more prolific grape Müller-Thurgau. But Silvaner has made its comeback. The world’s largest acreage of Silvaner lies in Germany, with ca. 5,000 ha (12,500 acres), where it is the fifth most important grape today, equal to 5% of the country’s vineyard area. Of this 2,371 ha (ca. 5,859 acres) are planted in Rhein hessen and 1,406 ha (3,474 acres) in Franken, the world's largest Silvaner regions. The grape is particularly adept at reflecting its terroir: mineral tones clearly underscore fruity, spicy or herbal / vegetal aromas remi- niscent of honeydew melon, apricot, apple, orange or lemon peel; coriander; celery and new-mown hay or grass; and sometimes, toasty notes – as depicted in the glass to the right. FESTIVALS TO ATTEND Going all out: Wine Pinnacle Awards 2019 and the GREAT Wine & Dine Festival When it comes to wine awards, it’s often a little hazy as to how the final entries are selected, and how the winner is decided. It’s also important to ask how relevant it is to you. Well, perhaps those questions can be answered by Resorts World Sentosa. They’ve gotten together a five-member Wine Committee of luminaries, helmed by Jeannie Cho Lee, the first Asian Master of Wine, and an independent jury of over 80 wine professionals to launch its inaugural Wine Pinnacle Awards 2019. Held from 10 to 12 October this year, the awards will not restrict wines under consideration by origin, submissions or entry fees. The gala dinner and awards ceremony will be held on 10th October, in partnership with two Michelin-starred La Grand’Vigne . You might ask how is this relevant to me? Well, if pomp and pageantry isn’t your thing, however, The GREAT Wine & Dine Festival will be on during the awards season, and many of the nominated wines (some of the best ones in the world, we remind you), will be paired with food from Resorts World’s many celebrity chef-helmed restaurants.

The vineyard is managed as both organic (AB label) and biodynamic (Demeter, Biodyvin labels). Harvest By hand, from the 16th to the 25th of September. Vinification method Transfer of whole grapes by gravity into wood and cement vats. Cold, pre fermentation maceration is achieved under inert gas. Then, natural fermentation at low temperature (25°C max). Ageing Ageing of 1/3 in barrels (15% in new wood), 1/3 in Demi- muids and 1/3 in amphoras for 6 months, then blending in uncoated cement vats for 3 months. No fining. There are a number of different styles of presses that are used by wine makers but their overall functionality is the same. The pressure must be controlled, especially with grapes, in order to avoid crushing the seeds and releasing a great deal of undesirable tannins into the wine. A basket press consists of a large basket filled with the crushed grapes. Pressure is applied through a plate that is forced down onto the fruit. The mechanism to lower the plate is often either a screw or a hydraulic device. The juice flows through openings in the basket. The basket style press was the first type of mechanized press to be developed, and its basic design has not changed in nearly 1000 years. HISTORY The history of the wine press and of pressing is nearly as old as the history of wine itself with the remains of wine presses providing some of the longest-serving evidence of organized viticulture and winemaking in the ancient world. The earliest wine press was probably the human foot or hand, crushing and squeezing grapes into a bag or container where the contents would ferment. The pressure applied by these manual means was limited and these early wines were probably pale in color and body, and eventually ancient winemakers sought out alternative means of pressing their wine.
