Featured Recipe ~ Pasta Quattro Formaggi (Macaroni & Cheese) Ingredients Serves: 6 2 3/4 cups heavy cream Heat oven to 350 degrees 1 cup emmenthaler cheese 1 cup gruyere cheese 1/2 cup grated parmesan 1 1/4 lbs. shell or fusilli pasta 2 teaspoons black pepper Directions Bring a large pot of salted water to boil for the pasta. Pour cream into a large saucepan and place over medium heat, watch closely to avoid scorching. Bring the cream to a simmer and reduce by a quarter, about 5 minutes. Reduce heat to low and add the cheese stirring occasionally while the cheese melts, about 10 minutes. At the this time, cook pasta until tender, about 8-10 minutes. Drain well. Add cooked pasta to the cream sauce and mix evenly, add pepper. Transfer to a greased casserole dish or baking pan.
