The name refl ects the pungent taste, which resembles a peppery compound of cloves, cinnamon and nutmeg or mace. Good with eggplant, most fruit, pumpkins and other squashes, sweet potatoes and other root vegetables. Combines well with chili, cloves, coriander, garlic, ginger, mace, mustard, pepper, rosemary and thyme. AAnisenise The aroma and taste of the seeds are sweet, licorice like, warm, and fruity, but Indian anise can have the same fragrant, sweet, licorice notes, with mild peppery undertones. The seeds are more subtly fl avored than fennel or star anise. Good with apples, chestnuts, fi gs, fi sh and seafood, nuts, pumpkin and root vegetables. Combines well with allspice, cardamom, cinnamon, cloves, cumin, fennel, garlic, nutmeg, pepper and star anise. BBasilasil Sweet basil has a complex sweet, spicy aroma with notes of clove and anise. The fl avor is warming, peppery and clove-like with underlying mint and anise tones. Essential to pesto and pistou. Good with corn, cream cheese, eggplant, eggs, lemon, mozzarella, cheese, olives, pasta, peas, pizza, potatoes, rice, tomatoes, white beans and zucchini. Combines well with capers, chives, cilantro, garlic, marjoram, oregano, mint, parsley, rosemary and thyme. BBayay LLeafeaf Bay has a sweet, balsamic aroma with notes of nutmeg and camphor and a cooling astringency. Fresh leaves are slightly bitter, but the bitterness fades if you keep them for a day or two. Fully dried leaves have a potent fl avor and are best when dried only recently. Many cold dishes, like the two introduced here, are extremely easy to make and can be made in advance, so the cook can concentrate at the last minutes, on the hot dishes that must be served fresh from the wok. Silken tofu with avocado Tofu or bean-based product is one of the most beloved sources of protein for many vegetarians. In this collection, I purposefully introduce a wide variety of bean-based foods, among which, silken tofu is easily the most delicate one. Its smooth and indeed silken texture is perfectly complemented by the buttery avocado in this dish. Don’t even think of using an unripe avocado! Ingredients: 7 oz Silken tofu 2 tbsp Light soy sauce diluted with 1 tbsp water ½ tsp Sesame oil 1/2 Perfectly ripe avocado, sliced. Directions: Turn the block of silken tofu out on to a serving dish. Cut the block into 1/8-3/8 in slices. Then push down gently so the slices lean towards one end of the dish. Pour over the diluted soy sauce and sesame oil. Served with grilled vegetables and a fresh herb sour cream. Note If you cannot find yellow beets, they can be replaced by yellow carrots. Ingredients Salmon Vegetables 4 Steak Salmon filet 2 Unit(s) Yellow beet 45 Ml Maple syrup 1 Unit(s) Fennel 12 Grape(s) Sichuan pepper 4 Unit(s) Green onion 200 Gr Orzo Salt and pepper Salt and pepper Sour cream 125 Ml Sour cream 1 Unit(s) Lemon juice 10 Sprig(s) Chives 10 Leaf(ves) Oregano Salt and pepper Preparation Preparation time 45.00 mins Preheat your BBQ at 450.00 F° Preparation Soak the cedar planks in warm water.
