The various amount and combination of botanicals create certain flavours with distinctive notes. GEOGRAPHY Originally from Holland, where it was called genever, gin is now made all over the world. However, the majority of popular gin brands are distilled in the United Kingdom. CATEGORIES London dry: A high-proof, aggressive, crisp style of gin with prominent flavors of juniper and citrus. The London dry style is widely considered the benchmark for all other gin. While it is associated with the city, it does not need to be made in London; in fact, only a couple of London dry gins are actually made in London proper. Plymouth: A gentle, citrus-forward style of gin similar to traditional London dry but with a lower ABV. Plymouth gin is distilled at a specific distillery in Plymouth, England. Old Tom: London dry’s historical cousin, boasting a similar juniper-forward flavor profile but with a richer body and sweeter flavor. Genever: The granddaddy of all gin created by the Dutch as a delivery system for juniper, which was thought to offer protection from the plague. Genever is distilled from a malted wine base and then redistilled with botanicals. Its flavor is sweeter and richer than other style of gin, almost like an unaged whiskey with a hint of botanicals. New style: Also called “New Western” or “American” to indicate that this is the Wild West of gin. Most take flavor or style cues from the classic gin styles, then add or subtract botanicals and experiment with different raw materials for the base spirit.

    The Geese & Fountain Gin List Updated July 2020 Aber Falls Orange Marmalade Gin 2.80 The village of Abergwyngregyn is home to the distillery, and sits at the foot of the famous Aber Falls waterfall. Attracting over 50,000 visitors a year, this picturesque spot is easily accessible, just off the A55 and a stone’s throw from the coast. Previously a slate works in the 19th century, a margarine factory during the world wars, and more recently a drinks wholesale depot, the Aber Falls distillery building has been lovingly restored and refurbished, proving the ideal place to create unique spirits and demonstrate the passion and skill in distilling craftsmanship. Aber Falls have made their name as a whisky distillery ("Distyllfa Whisgi") but have introduced a range of contemporary gins, of which the orange marmalade is spectacular. Using Welsh-inspired botanicals to give an authentic sense of place to their spirits, the gin boasts a balance of sweet and bitter orange flavours, with the pine flavour of juniper: a citrus hit with warming aftertaste, guaranteed to tickle your tastebuds. Adnam’s Rising Sun Gin 3.50 Adnam’s are better known for their brewing than their distilling, but the quality in their spirits has been turning heads lately. As the sun rises above the North Sea, the rye in the fields around Adnam’s distillery in Suffolk is amongst the first to enjoy the early morning rays, or so they say. Currently, the collection stands at 50,000 bottles of fine wine and over 10,000 bottles of whiskey acquired through reputable merchants, auctions, and numerous trips to the wineries and distilleries where suppliers have now become close friends, ensuring that the family always has access to the finest and rarest bottles.

    GIN HISTORY A cocktail that was introduced by the army of the British East India Company. In India and other tropical regions malaria was a persistent problem, in the 1700’s it was discovered that quinine could be used to treat the disease, although the bitter taste was unpleasant. British officers in India in the early 19th century took to adding a mixture of water, sugar, lime and gin to the quinine in order to make the drink more palatable. Over the generations since gin has expanded to see production of small batched gin independent gin distillers all the way to larger distillers who have been around for many year’s.
