Kleine Zalze Cellar Selection 5 6 18 Bush Vines Chenin Blanc, South Africa Low-yielding old ‘bush vines’ planted on the Knorhoek Farm’s vineyards on the lower slopes of the towering Simonsberg Mountain produce this ripe, tropical-fruit flavoured Chenin Blanc. Drifting Chardonnay, Lodi County, USA 6.7 7.7 23 The Chardonnay grapes for this generously flavoured white, are grown in vineyards planted on the rich, sandy loam soils of Lodi, located at the top of California’s Central Valley region. Here the vines are bathed in warm sunshine for much of the growing season and the grapes reach full ripeness easily. After harvesting and fermentation the wine is French-oak aged for about three months. Tropical fruit and green apple show on the nose, backed by toasted oak spice, the palate finishes with notes of zesty lemon. Just perfect with chicken, pork, pastry with rich buttery and creamy sauces. Formed from primarily Chardonnay grapes, this wine is vegetarian. Dr. Loosen Riesling, Germany 27 This wine is a fruit-driven Riesling that combines extraordinary concentration and length with a bracing minerality. Medium-sweet, the wine shows notes of both dark fruits, like blackcurrant, alongside grapefruit and lime. A wine that pairs well with sweetish, savoury, Asian-inspired dishes, this wine is vegetarian and vegan friendly. Domaine Thomas Le Pierrier Sancerre, France 30 Subtle hints of gooseberry and citrus are the hallmarks of this classic Loire Sauvignon. The palate is flinty and crisp with an elegantly long length. Pale straw in colour; fresh Sauvignon Blanc aromas that suggest perfectly ripe fruit harvested at its apogee of flavour and potency with suggestion of ripe melon, citrus, fine floral and honey on a backdrop of cool rainwater on crumbled limestone; crisp and compelling on the palate, with an almost palpable vibrant interplay of fruit and acidity; lots and lots of clean, delicious Loire Valley Sauvignon Blanc flavour that just lasts and lasts and refreshes and refreshes. Arido Malbec, Argentina 5.5 6.5 19 Made from 100% Malbec grapes that are harvested by hand from vineyards planted on well-drained, sandy-loam soils. Here at altitude the nights are very cold and the ripening season long. Medium ruby-red, the nose shows red fruits and notes of dried fig: the palate is fruit led and fresh. Nederburg The Manor Shiraz, South Africa 5.7 6.7 20 Vineyards in the Paarl, Durbanville, Philadelphia and Stellenbosch regions provide fruit for this 100% Shiraz. The wine is matured in new-, second- and third-fill oak for a period of 12 to 18 months. An abundance of prune, plum and cherry with pencil shaving and oak spice aromas is met on the palate by flavours of ripe plum, cherry and dark chocolate. Adds spice and juicy fruit, to full-flavoured beef, lamb or game dishes, this wine is ethically produced and vegetarian. Poggio Cheto Chianti Classico, Italy 23 The Chianti Classico region is situated directly between Florence and Sienna. Here in 1716, Grand Duke Cosimo III of Tuscany identified the region as being the best for growing grapes to make Chianti. Dark brilliant ruby. A wonderfully refined nose is full of ripe plum and cherry aromas, filled out by tantalizing spicy notes. The fruit is lush and forward on the palate with sweet toasty oak flavours blended with bitter chocolate and ripe raspberry. Rich and intense flavours that are perfect for full-flavoured beef and pasta dishes. Formed from primarily Sangiovese grapes, this wine is ethically produced, vegan and vegetarian friendly. Marques de Morano Rioja Crianza, Spain 7.3 8.3 24 Made from Tempranillo and Mazuelo grapes which are matured for at least a year in cask followed by at least a year in bottle to give that classic smooth oaky taste. great allrounder, as good with Mediterranean dishes as with spicy food or a Sunday roast. Formed from primarily Tempranillo grapes, this wine is vegetarian and vegan friendly. LFE Gran Riserva Pinot Noir, Chile 25 A bright ruby-red coloured wine bursting with dark plum, red cherry and exotic black tea aromas. The palate shows generous fruit flavours, yet is elegantly balanced, the fruit complemented with a smoky-oak character, gained from a period of ageing in oak barrels. Perdigal Chateuaneuf du Pape, France 36 From one of our favourite Rhone producers this is rich and heady with intense flavours of red plums and bramble followed by notes of pepper, thyme and liquorice on the long, silky smooth finish. ROSÉ WINES 175ml 250ml Bottle Wicked Lady White Zinfandel, USA 4.5 8.4 16.5 Medium-sweet rosé made using Zinfandel grapes from warm Californian vineyards. The juice from the crushed grapes spends a short time in contact with the skins which gives the wine a salmon-pink colour. Shows red-fruits on the rich, juicy palate. Sweet, soft and light rosé, can work well with savoury foods that have a sweet dimension. Villa d’Elsa Pinot Grigio Blush, Italy 5.7 6.7 20 Dry rose full of summer berries and citrus fruits – very refreshing and easy drinking. ‘Blush’ Pink Colour And Delicate Wild-Strawberry Flavours, Balanced By A Crisp Citrus Finish. Mirabeau Pure Provence Rosé, France 26 Fashioned from grapes grown in some of the highest vineyards in the Côtes de Provence. Grenache is blended with the punchier Syrah with its ripe cherry and raspberry flavours, a smattering of Vermentino provides delicacy and a hint of white pepper. Provençal, herbaceous ‘garrigue’ flavours meld well with hints of grapefruit, cherry and orange blossom on a palate which finishes on a refreshing minerally note. Deliciously versatile rosé, ideal with salads, seafood, grilled chicken or pasta, this wine is ethically produced and vegetarian. 125ml Bottle SPARKLING WINES & CHAMPAGNE Pontebello Prosecco, Italy 4 16.5 Elegant and crisp with a fine bubble mousse and delicious apricot, pear and citrus flavours. This sparkling white wine is made by Pontebello in Veneto. Whilst famed as an apéritif, the soft fizz of Prosecco also partners light chicken dishes, delicate seafood and salads well. It is created with mosty Glera grapes. Bottega Rose Gold, Italy 30 Pinot Noir grapes from Oltrepò Pavese are hand-picked to make this peach-coloured rosé. The skins stay in contact with the must for 24 hours prior to a gentle pressing to separate them, this creates the delicate colour and helps to provide the wine with notes of mixed red berries to go alongside floral and white fruit aromas. Versatile rosé, ideal with salads, seafood, grilled chicken or pasta. Formed from primarily Pinot Noir grapes, this wine is ethically produced, vegan and vegetarian friendly. Veuve Cliquot, France 65 Well known for both its full-bodied, biscuit style and its consistency. A black grape dominated blend, using 50% Pinot Noir and 20% Pinot Meunier together with 30% Chardonnay. A blend of over 50 crus, mostly Premier and Grand Cru, with over 25% reserve wines. Excellent partner for light dishes based on white fish or chicken, green vegetables, salads and savoury cheese dishes. Elegant, reflecting fresh citrus fruits, white flowers and peach on the nose, evolves in the mouth, fluctuating between freshness, suppleness and fullness. Chardonnay dominated Champagnes, with finesse and minerality, enhance elegant seafood, chicken and pork dishes.

  • The Geese & Fountain Gin List
The Geese & Fountain Gin List Updated July 2020 Aber Falls Orange Marmalade Gin 2.80 The village of Abergwyngregyn is home to the distillery, and sits at the foot of the famous Aber Falls waterfall. Attracting over 50,000 visitors a year, this picturesque spot is easily accessible, just off the A55 and a stone’s throw from the coast. Previously a slate works in the 19th century, a margarine factory during the world wars, and more recently a drinks wholesale depot, the Aber Falls distillery building has been lovingly restored and refurbished, proving the ideal place to create unique spirits and demonstrate the passion and skill in distilling craftsmanship. Aber Falls have made their name as a whisky distillery ("Distyllfa Whisgi") but have introduced a range of contemporary gins, of which the orange marmalade is spectacular. Using Welsh-inspired botanicals to give an authentic sense of place to their spirits, the gin boasts a balance of sweet and bitter orange flavours, with the pine flavour of juniper: a citrus hit with warming aftertaste, guaranteed to tickle your tastebuds. Adnam’s Rising Sun Gin 3.50 Adnam’s are better known for their brewing than their distilling, but the quality in their spirits has been turning heads lately. As the sun rises above the North Sea, the rye in the fields around Adnam’s distillery in Suffolk is amongst the first to enjoy the early morning rays, or so they say. They add Japanese matcha tea and lemongrass to supplement the usual botanicals, making a sharp tasting, refreshing gin. Audemus Pink Pepper Gin 4.25 Launched in 2013, Pink Pepper Gin is distilled in the living room of founder Miko Abouaf's house in the centre of Cognac.

THE ATLAS COLLECTIONS Dear Guests, Welcome to ATLAS - a labour of love that honours my grandfather, CS Hwang, the late founder of Parkview Group, and the beautiful space he created in which ATLAS resides. It is our hope that your experience at ATLAS reflects the passion and attention that has gone into every aspect of its creation. A grand and beautiful space, we invite you to unwind, enjoy, celebrate and indulge as our talented and dedicated ATLAS team makes you feel most welcome and at home. The ATLAS Collections feature two of the world’s most remarkable physical collections of Gin and Champagne. Building the ATLAS Collections was a monumental task which took over two years to curate and assemble. We are also delighted to feature a selection of rare and exceptional still wines and whiskies from my own family’s private cellar, which for the first time since its inception almost 40 years ago, has been opened especially for our guests at ATLAS. Building upon the modest collection of wines started by my grandfather, the Parkview Family Cellar found a permanent home in 1989 with the opening of the Parkview Group’s flagship property, Hong Kong Parkview. Initially consisting of a small collection of 50 bottles of right bank Bordeaux wines, the collection grew steadily under the stewardship of my uncle, George Wong, and his son Alex. By 2000, the collection was at 3,000 bottles and has now expanded beyond the right bank to other regions in France and the rest of the world. Currently, the collection stands at 50,000 bottles of fine wine and over 10,000 bottles of whiskey acquired through reputable merchants, auctions, and numerous trips to the wineries and distilleries where suppliers have now become close friends, ensuring that the family always has access to the finest and rarest bottles.
