While the festi- val traditionally is home to classic hamburg- ers and hot dogs, Elvis Presley, Coca Cola, and Mickey Mouse, this summer an organi- zation called Innovation Barn at 58N6E was able to take a slightly different route, pro- moting the American Dream framework. “Everyone has a dream in progress,” said Mona Anita K. Olsen, founder of Innovation Barn at 58N6E, an organization that encour- ages people to “think outside the barrel.” Innovation Barn at 58N6E (which hap- pens to be the geographic coordinates of Borhaug, Norway) is the culmination of many years of ideation by Olsen after her Fulbright grantee work at the University of . Entering the last day of the World Cham- pionship in Bergen on September 24, the Norwegian Cycling Team had not performed up to their usual standards. The women’s rac- es had been dominated by the Dutch, while the Norwegian juniors, who were predicted to fight for the victory in both the road race and the time trial, weren’t even close to plac- ing on the podium. Norway’s last chance for a medal rested on the shoulders of Norwe- gian cycling stars Edvald Boasson Hagen and Alexander Kristoff. After more than 100 miles of cycling, the last event of the 2017 Cycling World Championship, the road race, ended in a mass sprint with Alexander Kristoff and Slo- vakian superman Peter Sagan battling it out for the win. To the dismay of the thousands of Norwegian spectators in Bergen who had turned up hoping for a Norwegian victory, Sagan ended up beating Kristoff by a cou- ple of inches. When the leaves begin to turn and the air becomes laced with a chill, I know that fall has finally arrived. It’s my favorite season, the one that brings back memories of crunch- ing through fallen leaves as a child, picking out the perfect pumpkin to carve, and sipping steaming cups of apple cider to brace against the cold. This time of year it seems as though pumpkin or apple arises as an individual’s fa- vorite fall flavor. Pumpkin doesn’t have much of a place in traditional Norwegian cooking and baking, but apple sure does, with apple cake (eplekake) being a true favorite. Typical- ly a rich buttery sponge cake with apple slices wedged in the batter, it’s as simple as can be, requiring little more than good ingredients to create a comforting cake. I’ve begun experimenting with alterna- tives to gluten, dairy, eggs, and even sugar in my baking, and I recently decided to see if I could convert my own eplekake recipe into one that would work with a number of dietary restrictions. Norwegian Apple Cake with Autumn Spices (Gluten, Dairy, and Egg Free)

2-3 large apples 1 cup unsalted vegan butter spread (I 2 cups gluten-free flour (I use Bob’s use Earth’s Balance), at room temp. Red Mill Gluten Free 1-to-1 Baking ¾ cup coconut sugar, plus more for Flour) dusting 2 tsps. baking powder 2 tbsps. ground raw flaxseed or ½ tsp. cinnamon, plus more for flaxseed meal dusting 5 tbsps. water ½ tsp. freshly ground cardamom 2 tsps. vanilla extract ¼ tsp. kosher salt

Preheat the oven to 350°F and grease an 8-inch springform pan. Peel and thinly slice the apples and set aside. In a medium-sized mixing bowl, whisk together the flour, baking powder, cinnamon, cardamom, and salt. To prepare the flax egg, stir the ground flaxseed and water in a small bowl and let rest for 5 minutes. In a large mixing bowl, cream the butter spread and sugar until it’s pale and silky and mousse-like, about 3 minutes, scraping down the sides of the bowl as needed. Add the flax egg, mixing well. Stir in the vanilla extract. Add the flour mixture and stir until incorporated. Pour the batter into your prepared pan. Arrange the apple slices in a decorative circular pattern around the bottom of the pan, starting in the center and working your way out. Dust cinnamon and sugar over the top of the cake. Bake until a toothpick inserted in the center comes out clean, approximately 1 hour and 15 minutes, checking occasionally. The top will be deeply colored, but feel free to place a sheet of foil over the top if it’s coloring too quickly. Cool on a baking rack, then remove from the pan. For years I’ve been a fan of fruit com- potes. Simple, easy to prepare, and an effi- cient use of fruit that may have gone a little soft, they’ve been a staple in my kitchen for as long as I’ve been cooking. Years ago, as a newly married, full-time working student with little time on my hands, they quickly be- came a go-to recipe for me. Perfect for mix- ing in yogurt with granola on busy mornings or even just devouring straight from the pan for a quick after-dinner dessert. An excellent accompaniment to ice cream, compotes also featured prominently on childhood Saturday mornings when my mother would serve them alongside pan- cakes and waffles. I have fond recollections of fluffy, giant slices of Dutch Baby pan- cake drowning in rhubarb compote on cold weekend mornings. It was pure comfort— rich memories that evoke to this day all the warmth of a happy childhood, nurtured and centered around a generous table. Cardamom Pear Compote

4 large Bosc pears, or an equivalent 1 tbsp. water mixture of Bosc and Seckle pears, 2 tbsps. unsalted butter peeled, cored & diced ¼ tsp. kosher salt 1 tsp. cardamom, coarsely ground crumbled gingersnap/pepperkaker 4 tbsps. maple sugar or brown sugar cookies

In a medium saucepan, combine the pears, cardamom, sugar, and water. Heat over me- dium low, stirring occasionally until the pears begin to break down and become sauce-like, 10 minutes or so. I prefer to leave the compote with larger chunks, but if you like a sauce-like version, cook until smooth. Remove from heat and add the butter and salt. Serve immediately if desired over pancakes, yogurt, or vanilla ice cream. Sprinkle gin- gersnaps over all and serve.

I visited the Norsk Folkemuseum (the Norwegian Museum of Cultural History) in Bygdøy, Oslo, for the first time in 2004. I en- joyed my visit because I found this open-air museum very interesting and educational. But the second time I went, seven years later in 2011, I was excited beyond belief. That was when I saw, face to face, my eighth great-grandfather, Bjørn Tolleivson Frøysok! Let me take you back a few hundred years, to 1699 to be exact, to the village of Gol in Hallingdal, County. One of the biggest and most powerful landowners at the time was my ancestor, whom I affection- ately call “Big Bjørn.” Bjørn was married twice. He had 10 chil- dren with his first wife. After she died, he re- married and had eight more children with his second wife. In 1699 he decided to commis- sion a portrait of the entire family. He then do- nated this painting, which measured 52 inches by 78 inches, to the in Gol. I recently had the pleasure of spend- ing summer—July to be precise as that’s the month when all of Norway takes vaca- tion—in the tiny town of Fauske in county. Well actually, I spent it in the woods 10 kilometers away from Fauske with my partner’s family. And yes, “in the woods”— as in the neighboring buildings consisted of a slaughterhouse for the family’s reindeer herd and a haunted house, or so I was told. Not where you’d typically want to spend your summer vacation and not exactly a place where there’s much to do either. So why am I recommending you visit Fauske if I’m basically suggesting that it’s the most boring place in all of Norway? Because it is pure and wild and magical too! It is interesting that in modern times so many proponents of peace have arisen from the small country of Norway. Norway was instrumental in the creation of the most sig- nificant organization created for the prom- ulgation of peace, the United Nations (UN), not only as a founding member but also by taking the extra step of gifting the Security Council Chamber in the UN headquarters. Norway is also the place where the UN’s first Secretary-General, , hailed from. And although the Nobel Peace Prize was cre- ated and funded by the Swede Alfred Nobel, he bestowed the honor of implementing his vision to Norway. Many of our readers will be familiar with the iconic image of President Clinton flanked by PLO Chairman Yasser Arafat and Israeli Prime Minister Yitzhak Rabin. But few are aware of what it took to get to that place and who was responsible. Given Nor- way’s significant role in promoting peace, it makes sense that it was from this tiny coun- try that an entire peace process evolved.
