Environmental Services A Guide to the Preparation of Packed Lunches Introduction Home prepared packed lunches now provide the midday meal for large numbers of school children and adults. Whether we consume these meals in winter or summer, the selection of food commodities, methods of preparation and storage are vitally important. The guidelines contained in this leaflet are designed to assist you in the safe and hygienic preparation of packed meals. Bacteria All foods will contain some germs (bacteria) but cooking normally kills them off. You don’t usually cook a sandwich, so it is important that the number of bacteria is kept to a minimum. Clearly some foods are more susceptible to bacterial problems than others. High-risk foods, i.e. those that are high in protein, can be perfect breeding grounds, particularly if there is sufficient moisture and warmth to enable bacteria to grow. The following are a few tips on how to buy, prepare and store safe food. Purchasing Food When you go shopping use a cool bag to carry home your high-risk foods, including frozen and chilled foods. If you can, try to purchase these food commodities last. Do not leave high-risk foods for long periods in a warm car. Ensure when buying food that you check the ‘use by’ or ‘best before’ dates. Remember you may be preparing food to eat at a later date and so you will need to bear this in mind. Always use food within the recommended dates. Immediately you arrive home, place all high-risk foods into the fridge/freezer units, having first separated raw and cooked foods to prevent cross-contamination from occurring. -

I starched and ironed the tablecloth and napkins, polished each glass, and set the table at least a day before the big event. I slavishly followed menus, trekking from store to store to find the exact ingredients. No recipe was too long, no meal too elaborate. In fact, I thrived on multistep dishes that required days of attention and care: puff pastry, layered pates and vegetable terrines, miniature sweet and savory tarts. I still love to have friends over, but something happened along the way. First one daughter was born, then a second. Part-time work evolved into a full-time job. Casual hobbies became passionate avocations. With all these activities fighting for my time, I had to change the way I cooked. My menus are simple and flexible now, and my parties mostly spur-of-the- moment. I love potlucks and shared suppers, and kids are always welcome. The food's fun, the atmosphere's casual, and family and friends always gravitate to the kitchen. -

TYPE OF MEAL Breakfast: It is the first meal of the day served between 7 and 10.am. It offers all kinds of dishes that are suitable for the breakfast. Continental breakfast, English breakfast, American Breakfast and Indian breakfast menus are the commonly found menus. It may be in the form of table d’ hotel and a- la carte. Continental Breakfast: It is also termed as simple breakfast. It generally includes only bread and rolls with butter an preserves. Breakfast rolls include croissant, brioche, Vienna rolls. Etc . Preserves include Jam, marmalade and honey but honey is not placed on the table unless it is required. Term used in continental Breakfast Café complet- continental breakfast with coffee Café simple- only coffee with nothing to eat The complet- Continental breakfast with tea The Simple- Only tea, with nothing to eat. English Breakfast: It is heavy breakfast including the Fruit juices, stewed fruits, breakfast cereals , eggs, fish , meat, breads and beverages. Though the English breakfast is quite heavy traditionally, limited dishes are preferred by the guests. American Breakfast: American breakfast is neither too heavy nor light. It usually consist of eggs, juice, Bacon or sausage, toast or hash brown potatoes. It includes juice/ Fresh fruits, breakfast cereals, eggs to order, waffle/ pancake served with syrup and honey, choice of breads with butter and preserves. Coffee is the most preferred beverage. Chilled water is served before breakfast. Indian Breakfast: India is the land of varied culture, language and also of varied eating habits, Parathas, stuffed paratha, poori, masala etc are commonly served dishes in the North during breakfast along with bread and rolls, egg preparation. -
