“Top Chef” Finalist Lindsay Autry and Restaurateur Thierry Beaud Team Up to Bring THE REGIONAL Kitchen & Public House to West Palm Beach’s CityPlace, A Dining Destination Slated for Early 2016 —The dynamic culinary team’s new concept will occupy CityPlace’s southwest corner as the latest example of the downtown entertainment district’s recent expansion and growing appeal— West Palm Beach, Fla. (October 5, 2015)— Celebrated South Florida Chef and season 9 “Top Chef” finalist Lindsay Autry is partnering with seasoned restaurateur Thierry Beaud to open THE REGIONAL Kitchen & Public House in downtown West Palm Beach’s popular dining and entertainment destination, CityPlace. THE REGIONAL marks Autry’s first venture into restaurant proprietorship, and for Beaud, a new concept to add to his fast growing roster of exceptional dining establishments, which includes Pistache French Bistro and Paneterie Café and Bakery in West Palm Beach, PB Catch Seafood & Raw Bar and Patrick Leze‐ Palm Beach in Palm Beach, and later this season, a second Paneterie location in Delray Beach. “As a chef that has built a home and career in the Palm Beach area over the past several years, the launch of this amazing project excites me both personally and professionally,” said Autry. “I’ve had the privilege of working with this community of talented chefs, local artisans, and farmers over these years, and have seen the powerful influence they’ve had on our progressing dining scene. I’m grateful for this opportunity to highlight their talents, and couldn’t imagine a better partner with whom to build a restaurant inspired by the industry’s finest than Thierry Beaud. I am really looking forward to making our shared dream a reality.” Beaud and Autry first worked together in 2014, when the celebrity chef provided behind‐the‐scenes consultation on Paneterie’s current menu of café offerings. Autry’s exceptional industry knowledge and culinary talents made a strong impression on Beaud, and the successful collaboration gave inspiration for the two to team up again in a full‐service dining capacity. THE REGIONAL is the brainchild of that collaborative motivation. “THE REGIONAL represents a very exciting new collaboration for us and one that will highlight the talents of the team it brings together,” said Beaud. “With Lindsay at the helm, we knew that a cuisine and overall concept centered on consciously‐sourced food that respects the value of innovation, while honoring the nostalgic charm of the American kitchen table, would be the perfect foundation for this extraordinary culinary venture.” THE REGIONAL intends to present a unique perspective on America’s time‐honored cuisine through local ingredients, seasonally influenced dishes and the soulful inspiration of a chef‐driven kitchen, whose purposeful preparations and sophisticated techniques produce a new appreciation for the simple pleasures of well prepared, quality foods. Initial design discussions suggest an open‐kitchen main dining room tastefully partitioned to create a warm and intimate ambiance, outdoor patio seating, significant private dining space, and a distinct, elaborate bar and lounge area. An extensive wine cellar will ensure a seemingly endless variety of pairing options. As a chef inspired by consciously sourced ingredients, Autry has spent close to a decade working closely with South Florida’s most fundamental industry professionals‐ fisherman, farmers, and culinary artisans. Chef Autry’s intimate knowledge of regional product, as well as that of the exceptional product sourced beyond Florida’s borders, is matched only by the extraordinary culinary talents that have earned her industry celebrity and continued national acclaim. Under Autry’s leadership, THE REGIONAL kitchen team will feature the talents of first‐time Chef de Cuisine Sam Horrocks, whose most recent experience as Sous‐Chef at Pistache French Bistro and prior to that, was Executive Chef at Cucina dell’Arte in Palm Beach and studied under world‐renowned chef Daniel Boulud. More detail regarding THE REGIONAL’s dining experience, menu of offerings, and multi‐dimensional aspects of the guest experience will be revealed in the coming months. With the ink just dry on its CityPlace lease, the culinary team plans to work swiftly to renovate the 10,000 square‐foot space in hopes of opening in the early part of 2016. Chef Lindsay Autry’s exceptional culinary skills have earned her the opportunity to work alongside some of the best chefs in the world at prominent restaurants along the East Coast and in Mexico. A graduate of Johnson & Wales University, Autry honed her skill under James Beard Award winning Chef Michelle Bernstein, working as sous, then executive chef at a number of Bernstein’s top restaurants before headlining as a “Top Chef” finalist. Chef Autry was the Executive Chef of the historic Sundy House in Delray Beach, Florida with whom she also traveled to New York City to cook at the prestigious James Beard House, and in Spring 2015, Chef Autry won the Miami leg the traveling culinary battle COCHON 555, which allowed her to compete against the country’s best in the final COCHON competition during the 2015 Aspen Food & Wine. Before founding THE REGIONAL with Beaud, Chef Autry owned and operated her own successful catering company, Fin & Feather Palm Beach. As a native North Carolinian, Chef Autry describes her cuisine as soulful, embracing Mediterranean flavors with a blend of her southern roots.
