My mom used to make lot of chutney recipes with vegetables like carrot chutney, chow chow chutney and radish chutney. But I love carrot chutney, because it has a balance of all flavors like sweet, tart, spicy and salt. It tasted so good with samai idly. You can also make this chutney without coconut. For a change, do try this easy carrot chutney recipe for idly or dosa .You will definetely enjoy the goodness of carrot. Ingredients for Carrot Coconut Chutney Recipe Preparation Time: 10 mins Cooking Time: 10 mins Serves: 3 • 2 Big Carrots, Grated • 2 Tbsp of Urad Dal (ulundu) • 3 Red Chilies (long) • 1 Tsp of Ginger, Grated • 1.5 Tbsp of Coconut (Dry Dessicated) • Pinch of Tamarind • Salt to taste • 2 Tsp of Oil • Water as needed To Temper • 1 Tsp of Gingelly Oil • 1 Tsp of Mustard • 1 Tsp of Urad Dal • Few Curry Leaves • Pinch of Asafoetida Method for Carrot Coconut Chutney Recipe • Wash, peel the skin and trim the edges of carrot. FOOD FESTIVAL 2018 The scent of the warm, summer air carries with it winds of memories- home-made pickles, mango jams and a hundred other recipes of love. A walk back to those good, old summer days, with food in our tummies and satiated smiles; the food fest brings us back the simple pleasures of childhood. Nostalgia hits us hard when those summer flavours tingle our nose buds and lure us into memories more precious than the mundane fast food that’s slowly infiltrating our lives. We at the Vidyalaya see the food festival as a great occasion to go exploring; across our country and the world, in search of flavours unknown and smells fresh and sweet. Open the crumbling recipe books and fish out a recipe, the scent of which takes you back on a journey that has stood the test of time. We’d like to explore local and traditional delicacies, part of our rich, culinary heritage. Traditional practises have naturally kept us in sync with the environment. Some households even today make use of every part of the edible fruit, be it the seed or the peel. In keeping with this tradition of amalgamating every natural product into a delicacy, we’d like to invite all the parents to experiment and think beyond. Please ensure: The Vidyalaya has taught us to show responsibility towards our environment and we wish to practise the same during this year’s food festival. AVAL VADAI | POHA VADA RECIPE I usually start most of my days either with poha or oats upma or cereals. When I was talking to my friend, the other day, she gave me this aval vadai recipe, since this aval vadai does not need any grinding and soaking part, immediately I want to give it a try, for my evening snack. Me and my husband really liked it, because it tasted almost like medu vada with crispy texture on outside and soft on inside. You can make this poha vada recipe either as a snack or for navarathri celebrations or diwali or krishna jayanthi. Also make this quick easy aval vada for unannounced guests. I bet kids will love this vadai for sure. Serve this easy aval vadai either with coconut chutney or tomato ketchup and hot tea. Ingredients for aval vadai Yield : 9 Vadai 1 Cup of Thick Variety of Aval / Poha / Flattened Rice Flakes 1 Cup of Water 1 Medium Size Onion, Finely Chopped 2 Green Chilies, Finely Chopped 3 Tbsp of Thick Curd (Yogurt) 2 Tbsp of Rice Flour 2 Tsp of Besan Flour / Kadalai Maavu 1 Inch of Ginger, grated 1 Tsp of Whole Black Pepper Pinch of Asafoetida 1 Sprig of Curry Leaves 2 Tbsp of Cilantro (Coriander Leaves), Finely Chopped 1 Tsp of Salt or to taste Oil for deep frying Method Soak the aval(poha/rice flakes) in water for 5 mins. Drain as much as water from aval, mash well with hand or with back of the spoon. To the mashed rice flakes, add chopped onion, green chilly, ginger, black pepper, asafoetida, curry leaves, chopped coriander leaves, salt, rice flour, besan flour and finally add thick curd, give a quick stir. -
