ALOXE-CORTON PREMIER CRU TERROIR Geographical Linking the Côte de Nuits and Côte de Beaune, Aloxe-Corton is a origin famed village at the northern extremity of the Côte de Beaune whose hill marks a dramatic change in the landscape. Soil The vines, located in both Aloxe-Corton and Ladoix-Serrigny, on the border between the Côte de Beaune and the Côte de Nuits, benefit from eastern/southeastern exposure and grow in brown limestone soil that contains a high proportion of clay. Varietal 100% Pinot Noir. Vinification Traditional Burgundian vinification in open vats with long maceration and punching of the cap. Aged in oak barrels (25 to 30% new oak) for 14 to 16 months to lend structure and complexity to the wine. TASTING NOTES Visual Beautiful ruby red in colour with garnet tinges. Nose Redolent of mentholated notes and hints of forest undergrowth underpinned by a framework of red fruit (cherry) enhanced by a subtle touch of vanilla. Palate With its extremely soft tannic structure, this wine shows lovely balance and a hint of sucrosity. The finish reveals spicy notes of vanilla. SERVING Enjoy with Perfect with grilled or stewed red meats and roasted, even Asian- style lacquered chicken. Try it with beef tenderloin cooked with pearl onions or roast pigeon with figs and honey. It goes well with full-flavoured cheeses such as Abondance, Saint-Nectaire or the local mustard seed-studded Délice de Pommard.
