Bakewell Tart is an English confection consisting of a shell beneath layers of jam

Chef’s Twist UK-WR11 4QU We have put our own spin on this classic English tart through: Flavour – using pistachio to give an alternative nut flavour, and producing a double hit of raspberry with fruit filling lining the base and fresh raspberries baked on top to accentuate this flavour. Texture – instead of a shortcrust pastry we have used a Dutch style Vlaai pastry made with our donut mix to make the tart thinner providing a lighter eat. COMPOSITION WORKING METHOD

A tart base made using a Dutch style Vlaai Add all of the pastry base ingredients to a spiral mixer and mix on slow speed for pastry with Dawn® Premium Raised Donut 2 minutes and then 6-8 minutes on fast speed. Allow the dough to rest for 10 Mix, filled with a thin layer of Dawn® Delifruit Classic Raspberry, topped with an almond & minutes and then sheet out to 3mm - 3.5mm. Dock the sheeted dough and then pistachio flavoured cake mix using Dawn® cut out to line a 10” (25cm) flan tin. Line the pastry with a sheet of silicone paper Creme Cake Base - Plain, Dawn® Natural and fill with baking beans then blind bake for 15-20 minutes at 190°C. Almond Flavouring and Dawn® Pistachio Compound, topped off with fresh raspberries and chopped pistachio Once cool spread a layer of Delifruit Classic Raspberry over the base. Place all of the Pastry Base cake filling ingredients into a bowl fitted with a beater and mix on slow speed for UK/Ireland_021000g Dawn® Premium Raised Donut Mix 1 minute and then 3 minutes on medium speed. Fill the blind baked pastry case 460g Water UK/Ireland_02 with the cake filling approx. two thirds full. 10g Salt 30g Fresh Yeast Battenburg Mousse Top with chopped pistachios. Bake in the oven at 190°C for 15 minutes then add FruitBattenburg Filling Mousse Dawn® Delifruit Classic Raspberry Fruit Filling fresh raspberries to the top and continue to bake for a further 20-25 minutes
