The yellow-brownish soil of Castellina in Chianti is made by argillaceous loam: it is the argillite that embraces and nurtures the vines. In Panzano in Chianti vines are planted on galestro-rich soils that are rocky with mineral substances. Gagliole’s estate production systems are based on the principles of integrated farming. This environmentally friendly practice envisages limiting as much as possible the use of synthetic substances or any other active substance that can be harmful to plants and animals. The green manure practice is adopted to supply the soil with organic matter and limit the use of fertilizers. At Gagliole harvesting is done exclusively by hand. Ancient terraces embody the memory of landscapes stubbornly preserved by man’s expert labor. Gagliole also offers the possibility to stay in their luxury bed and breakfast where they offers wonderful meals such as the “Peposo all’Impruneta”. A typical tuscan dish that pairs with the Gallule Chianti Classico Riserva DOCG 2016, wine is made exclusively with Sangiovese grapes grown in centuries-old terraced vineyards of the Antico Podere Gagliole. The wine is deep ruby red color with garnet hues. Intense aromas of violet, cherries and redberries on the nose matched with pleasant spicy notes. This is a wine of great harmony and remarkable depth, rich and complex, qualities that only very old Sangiovese vines can produce. 4 VIAS MONTHLY SEPTEMBER 2020 ISSUE La Lastra, San Gimignano Environment before business is the philosophy of La Lastra. Azienda Agricola La Lastra consists of 2 different working farms: 7 hectares of vineyards in San Gimignano and 23 hectares not far from the historical centre of Siena (7 of which cultivated with vineyards, and 7 with olive trees). Guided by the great passion that inspires those who devote their lives to agriculture as a free personal choice, La Lastra cultivates its vineyards and olive trees following organic methods. The vinification of all their red grapes takes place in the beautiful ancient wine cellar in Marciano, while at the San Gimignano they produce the Vernaccia according to the Italian wine law. The basic bouquet of “Vernaccia di San Gimignano - La Lastra” wine features a rich olfactory non aromatic complexity that can be described thanks to the semantic hyperspace “fruity-ripe” exalting (through fixation) part of the volatile fermentative (but not pre-fermentative) compounds. VIAS MONTHLY 5 Camigliano, Montalcino Camigliano in the past was inhabited by the Etruscans who followed the course of the Ombrone River from the coastal Maremma area. Camigliano is one of the historical wineries of Montalcino, located in the South West area; Brunello from this historic estate is made from Sangiovese Grosso cultivated on 124 acres of vineyards that produce yields far below the legal limit. The vineyards, certified organic starting from 2017 vintage, have been brought to their full potential (today 530ha of which 93 are cultivated with vines) at an altitude of 300-350m asl. They have intensified the use of cover cropping, that is planting legumes in alternating rows in our vineyards that have the quality of fixing natural nitrogen in the soil and producing organic substances. Mechanical work is carried out by increasingly lighter tractors to tamp the ground as little as possible. To completely avoid the use of herbicides, inter-row hoers are used to clean the rows allowing the vines and their roots to remain intact, they fight disease that can possibly pervade the vines with a mixture of sulfur and copper is used to keep the vines healthy. Optimal results are also achieved through the clonal selection of the grapes after careful research of the results based on the nature of the terrain. Heating in the cellar is made possible with the use of biomass from practices in the vineyards rather than using traditional fossil fuels. On the coastline the air is sharper and the crests of the hills seem rising up directly from the vineyards. It’s here that in 1974, Cantine Bruni was founded as a simple passion in the Roccaccia vineyards, and today is one of the most important private estates in Maremma Toscana. It is on continuous quest for quality, and Bruni has always showed the significant levels the wines of Tuscany can reach. Maremma derives from the Spanish word Marisma, meaning “marsh. It was drained by first the Etruscans then by the Romans, in its natural state this is a very marshy area, as its name suggests and was finally drained in the 1930s.
