Gagliole, Castellina and Panzano in Chianti Documents mentioning the Gagliole Estate date back hundreds of years. A manuscript in the State Archives in Siena reveals that the son of the Langobard King Berengarius, who had fallen in love with the Tuscan countryside, bequeathed the Gagliole Estate to his wife in 994 A.D. The passing of centuries did no harm to the beauty of this estate which preserves the special character of this unique landscape. Gallule is the ancient name of the estate. Chianti Classico is one of the most important wine territories in Tuscany and worldwide established as a wine territory by Cosimo III de’Medici in 1716, receiving the DOC status in 1966 and DOCG in 1984. The real treasure of the Gagliole vineyards is their soils. They provide the basis for the elegant style and strong character of their wines. The yellow-brownish soil of Castellina in Chianti is made by argillaceous loam: it is the argillite that embraces and nurtures the vines. In Panzano in Chianti vines are planted on galestro-rich soils that are rocky with mineral substances. Gagliole’s estate production systems are based on the principles of integrated farming. This environmentally friendly practice envisages limiting as much as possible the use of synthetic substances or any other active substance that can be harmful to plants and animals. The green manure practice is adopted to supply the soil with organic matter and limit the use of fertilizers. At Gagliole harvesting is done exclusively by hand. Ancient terraces embody the memory of landscapes stubbornly preserved by man’s expert labor. Gagliole also offers the possibility to stay in their luxury bed and breakfast where they offers wonderful meals such as the “Peposo all’Impruneta”. A typical tuscan dish that pairs with the Gallule Chianti Classico Riserva DOCG 2016, wine is made exclusively with Sangiovese grapes grown in centuries-old terraced vineyards of the Antico Podere Gagliole. The wine is deep ruby red color with garnet hues. Intense aromas of violet, cherries and redberries on the nose matched with pleasant spicy notes. This is a wine of great harmony and remarkable depth, rich and complex, qualities that only very old Sangiovese vines can produce. 4 VIAS MONTHLY SEPTEMBER 2020 ISSUE La Lastra, San Gimignano Environment before business is the philosophy of La Lastra. Azienda Agricola La Lastra consists of 2 different working farms: 7 hectares of vineyards in San Gimignano and 23 hectares not far from the historical centre of Siena (7 of which cultivated with vineyards, and 7 with olive trees). Guided by the great passion that inspires those who devote their lives to agriculture as a free personal choice, La Lastra cultivates its vineyards and olive trees following organic methods. The vinification of all their red grapes takes place in the beautiful ancient wine cellar in Marciano, while at the San Gimignano they produce the Vernaccia according to the Italian wine law. The basic bouquet of “Vernaccia di San Gimignano - La Lastra” wine features a rich olfactory non aromatic complexity that can be described thanks to the semantic hyperspace “fruity-ripe” exalting (through fixation) part of the volatile fermentative (but not pre-fermentative) compounds. To be noticed the importance of the microbiological factor in the olfactory composition of this wine, the expression of a warm Tuscany in white. This family-run smallholding is the expression of a simple and serene country lifestyle, and of genuine and traditional farming practices. In the ancient farmhouse of Marciano, dating back to the eighteenth century, where our family lives and works in harmony with nature and where food is simple, genuine, tasteful food, made with love. As is the case for the Penne with Zucchini suggested pairing for Vernaccia di San Gimigniano DOCG 2017. VIAS MONTHLY 5 Camigliano, Montalcino Camigliano in the past was inhabited by the Etruscans who followed the course of the Ombrone River from the coastal Maremma area. Then became quite an important hamlet in the late medieval period, an outpost for Montalcino, joining in the fight to defend republican freedom in the middle of the 16th century. The symbol of Camigliano: the camel, found on a seal dating to the 13th century, can be connected to the influence of the papacy in the area, related to the movements of the Crusades reaching the Holy Land. Camigliano is one of the historical wineries of Montalcino, located in the South West area; Brunello from this historic estate is made from Sangiovese Grosso cultivated on 124 acres of vineyards that produce yields far below the legal limit. The vineyards, certified organic starting from 2017 vintage, have been brought to their full potential (today 530ha of which 93 are cultivated with vines) at an altitude of 300-350m asl. They have intensified the use of cover cropping, that is planting legumes in alternating rows in our vineyards that have the quality of fixing natural nitrogen in the soil and producing organic substances. Mechanical work is carried out by increasingly lighter tractors to tamp the ground as little as possible. To completely avoid the use of herbicides, inter-row hoers are used to clean the rows allowing the vines and their roots to remain intact, they fight disease that can possibly pervade the vines with a mixture of sulfur and copper is used to keep the vines healthy. Optimal results are also achieved through the clonal selection of the grapes after careful research of the results based on the nature of the terrain. Heating in the cellar is made possible with the use of biomass from practices in the vineyards rather than using traditional fossil fuels. They grow more than just grapes at Camiglia- no, from olive oil, local honey and jams, wheat for the pasta to all the produce used in the restaurant in the castle. One stop shopping at the shop will give you all you need to get start- ed on this famous dish from Camigliano. Here you can have the Organic Tagliatelle with Senatore Cappelli flour made locally with ragu sauce paired with Rosso di Montalcino DOC 2018, a younger wine that combines a special vivacity and freshness with a superb structure, and all while sitting in the castle watching the sunset high atop the hillside in Montalcino. 6 VIAS MONTHLY SEPTEMBER 2020 ISSUE Bruni, Grosseto Proceeding towards the south of Tuscany surrounded between little towns and castles there is all the essence of Maremma. On the coastline the air is sharper and the crests of the hills seem rising up directly from the vineyards. It’s here that in 1974, Cantine Bruni was founded as a simple passion in the Roccaccia vineyards, and today is one of the most important private estates in Maremma Toscana. It is on continuous quest for quality, and Bruni has always showed the significant levels the wines of Tuscany can reach. Maremma derives from the Spanish word Marisma, meaning “marsh. It was drained by first the Etruscans then by the Romans, in its natural state this is a very marshy area, as its name suggests and was finally drained in the 1930s.

What we realized with the 2016 is that this is not the case. This vintage is at the same level of 2015 and someone says it’s even better! Very cold winter, with some touches of snow guaranteed, with a mild and sunny spring, perfect conditions for the develop of the plants. The summer was a bit warmer then 2015 with only few days of rain in the beginning of August and the harvest period was fully insolated and anticipated to the 12th of September. Vinification and Ageing Casamatta Bianco is produced from the vineyards of Capalbio, south of Tuscany in Maremma. The grapes are hand-picked and fermented in stainless steel tanks, destammed and softpressed with dry ice.

    VIEW FROM THE CELLAR Giornata Another new winery to me this time around was Giornata, based in Paso Robles, who is specializing in Italian varietals and also making simply stellar wines. Giornata is the brainchild of Brian and Stefanie Terrizzi, who have made the pilgrimage from more standard 72 California varietals at their various previous positions to passionate and very gifted producers of truly Italian-styled wines from top vineyards in California’s Central Coast. This is not something that I had ever thought about as overly promising, though probably much of my lack of enthusiasm for Italian varietals on American soil may have to do with the rather desultory examples of Sangiovese I have tasted over the years from California. Clearly, the Giornata wines are cut from a very different cloth! I was absolutely enthralled by the quality of their very classically-styled Nebbiolo, Aglianico and other bottlings and look forward to following their progress with each passing vintage. 2014 Vermentino- Giornata (Paso Robles) The 2014 Vermentino from Brian and Stefanie Terrizzi is excellent and very classi- cally made (like all of their wines), fermented and raised in stainless steel and bottled fairly early to preserve freshness and bounce on the palate. The bouquet is lovely, wafting from the glass in a vibrant blend of apple, green olive, salty soil tones, citrus peel and a nice topnote of freshlyculled herbs. On the palate the wine is pure, fullish, crisp and complex, with lovely minerality and a long, complex and zesty finish. A lovely Vermentino. 2016-2020. 91. 2014 Barbera- Giornata (Paso Robles) The 2014 Barbera from Giornata is fermented with indigenous yeasts and raised primarily in a thousand liter foudre, with the overflow finding its way into old casks for its relatively short elevage.

    IL GHIZZANO BIANCO WINERY & VINEYARD The Venerosi Pesciolini family settled in the Colline Pisane area in the 14th century. For 26 generations, the family has been growing vines, olive trees, and cereals with a deep respect for tradition and terroir. Since 1996 Countess Ginevra Venerosi Pesciolini has run the estate. Colline Pisane comprises a range of gently rolling hills southeast of Pisa, none higher than 200 meters. Once covered by the sea, the sandy-limy-clay soil of Pliocene origin is very rich in fossil shells. Ghizzano’s 20-hectare (48-acre) estate is certified organic by Suolo e Salute; and all wines are certified USDA organic beginning with the 2010 vintage. Since 2006, biodynamic principles are also employed. Wood is used as the instrument for the evolution of wine in time, to allow it to mature, without overpowering the fruit; resulting in wines with superior ageability and the right balance. THE HARVEST & VINIFICATION Grapes are hand picked and placed into small-aerated crates with a capacity of approximately 20 kg. Following meticulous selection on the sorting table, grapes are destalked. The Trebbiano and Malvasia Bianca grapes are left on their skins for a whole night before pressing to extract more character and then are fermented spontaneously with indigenous yeasts in stainless steel tanks for 3 months. TASTING NOTES In the “White Version” of Il Ghizzano, the aromatic fruit of Vermentino is enriched by the strong character of Trebbiano and balanced by the texture of Malvasia Bianca. Optimal ripening for all 3 grapes creates a wine which is very easy to drink.

It is a family-owned, inter- connected network of exceedingly small growers, virtually all of them multi- generational and married to the land. Chief enologist Paolo Caciorgna is a master Winemaker: Paolo Caciorgna of his craft, and one of the true experts in native Tuscan varietals. Here, his Generation: 2nd Sangiovese and Alicante blend provides a pleasing melange of tart, dried cherry and liquid smoke, along with a faint chalkiness and a finish that is pleasingly dry and briny.
