Since her arrival she became an entrepreneur bringing the taste of Columbian Afro centric, and traditional South American classical dishes to 1411 East 7th, the East Side of Austin. Casa Columbia is about a mile east of IH-35. Emila follows in the tra- dition of preparing recipes that transcend from Africa. These include traditional plantain, beef, rice and other recipes. Usually in the Carib- bean and South American ar- eas you will also find pork dishes which have a Latin fla- vor, and recipes made with Omni Hotel yucca, a plant which is simi- lar to the white potato. Emila has made sure to include these dishes in her menu. Since Emila’s tran- scending into the restaurant business in Austin, she has undergone a few personal growth experiences.
