DAME's WINE COLLECTION: We've Gone All in on Natural Wine Because DAME’S WINE COLLECTION: We’ve gone all in on natural wine because we believe in celebrating farmers and other stewards of the land who work tirelessly to create biodiverse landscapes. Great wine is a transmitter of a certain place and time in history: if made with nothing but grapes, a bottle has the ability to tell us what the soil in the vineyard is composed of, what the weather was like in a given vintage, and what the surrounding flora and fauna are doing. Cover it up with any number of 60-plus legal chemical additives, and what are you left with? Something engineered that no longer transmits its story. The winemakers represented on these pages make wine from their core; with dedication and integrity for the land they farm. We are delighted to share the wines and the stories of folks whose hearts lay in the same vein as our own. These producers represent some of the world’s most unique vineyards and rare heritage grape varietals. We believe sharing these special wines with you is an honest extension of our desire to provide thoughtful hospitality. Domaine Labet remained in his father’s stead, while Julien started his own label focusing on ouillé styles of white wines, something that was a departure from the history of the Jura. The two estates have now merged: Domaine Labet is run by Julien and they have seamlessly blended the tradition of sous-voile whites (nutty, oxidized, from un-topped barrels) with new-ishly popular ouillé whites (fresh, minerally, from topped-up barrels). His wines labeled ‘Fleur’ are of this new ilk. The bottles below might be the closest representation of how wine was made over 5,000 years ago in the Republic of Georgia…what some may consider the ‘first’ wine ever produced. White grapes are left to ferment on their skins in barrels, steel vessels, or clay amphorae, lending all shades of color from golden yellow to burnt amber, as well as tannin, texture, and loads of complexity. The main source of data for the 2015 Survey of Area under Vine was the Wein-ONLINE system operated by the Federal Ministry of Agriculture, Forestry, Environment and Water Management (BMNT). Data from the remaining federal states was collected by means of a questionnaire (primary data collection). Information relating to the (approved) nurseries was provided by the Burgenland and Lower Austrian Chambers of Agriculture and the Styrian state government (Agricultural Research Centre). According to the 2015 Survey of Area under Vine, Austria’s vineyards occupied 45,574 hectares. The planted vineyard area was 45,439 ha, which corresponds to 94 ha less (or a 0.2% decrease) in comparison to the 2009 Survey of Area under Vine. The long-running trend that suggested a shift away from white wine and towards red was quashed by the 2015 Survey of Area under Vine. While the white wine vineyard area increased by 2.3% to 30,502 ha compared to 2009, the red wine area decreased by 4.9% to 14,937 ha. Figure 1 shows the evolution of Austrian viticulture after the Second World War. The largest area under vine was recorded in 1980 at 59,432 ha. From 1980 onwards, the white wine vineyard area has continuously decreased, while the red wine vineyard area has expanded.

    Structure in Wine steiia thiAst What is Structure? • So what is this thing, structure? It*s the sense you have that the wine has a well-established form,I think ofit as the architecture ofthe wine. A wine with a great structure will often remind me ofthe outlines of a cathedral, or the veins in a leaf...it supports, and balances the fiuit characteristics ofthe wine. The French often describe structure as the skeleton ofthe wine, as opposed to its flavor which they describe as the flesh. • Where does structure come firom? In white wines, it usually comes from alcohol or acidity; in red wines, it comes from a combination of acidity and tannin, a component in the grapes' skins and seeds. Thus, wines with a lot of tannin (like cabernet) also have a lot of structure. Beaujolais is made from gamay which does not have much tannin. As a result, Beaujolais can lack structure; it feels soft, flat or simple in the mouth (though its flavors can certainly still be attractive). • While structure is hard to articulate, you can easily taste or sense it —^and the lack of it. • Understanding structure is critical to understanding any ofthe ''powerful" red varieties: cabernet sauvignon, merlot, syrah, nebbiolo, tempranillo, and malbec, to name a few. I just don't think you can understand these wines unless you understand structure, and how it frames and focuses the powerful rush of fruit. It adds freshness, and a "lightness" to the density ofripe fiuit. Structure matters when pairing wine and food. Foods with a lot of structure themselves— like a meaty, thick steak-need wines with commensurate structure (like cabernet), or the food experience can dwarfthe wine experience.

A young and desperate protagonist, destitute on the streets of Paris, praying to a photograph of a saint who is later revealed to be nothing more than a famous prostitute. It’s a funny scene with a great punchline and best of all: his wish comes true. He gets his wine and his bread, and he is restored. We too understand the happiness that simple pleasures can provide, when a solitary glass of wine can change your entire day. That’s why we built Dear Sainte Éloise – a place of simple pleasures and replenishment, and happiness, too. We like to think of this bar as a place where journeys are made and connections are forged. The pages of this wine list are filled with wines that have the ability to transport the drinker away from the everyday to fantastic faraway lands – from the beloved wine regions of Australia, to the incomparable sites of Europe, and beyond.
