    USE OF NATURAL COLOURS IN THE ICE CREAM INDUSTRY Dr. Juan Mario Sanz Penella Dr. Emanuele Pedrazzini Dr. José García Reverter SECNA NATURAL INGREDIENTS GROUP Definition of ice cream Ice cream is a frozen dessert, a term that includes different types of product that are consumed frozen and that includes sorbets, frozen yogurts, non-dairy frozen desserts and, of course, ice cream. In order to simplify its classification, we can consider for practical purposes two different types of frozen desserts: ice cream and sorbets. Ice cream includes all products that have a neutral pH and contain dairy ingredients. While sorbet refers to products with an acidic pH, made with water and other ingredients such as fruit, but without the use of dairy. Additionally, when referring to ice cream, we are not referring to a single type of product, we are actually referring to a wide range of these. Ice cream is a food in which the three states of matter coexist, namely: water in liquid form and as ice crystals, sugars, fats and proteins in solid form and occluded air bubbles in gaseous form, Figure 1. Artisanal ice creams based on natural ingredients which give it its special texture. It should be noted that ice cream is a very complete food from a nutritional point of view since it incorporates in its formulation a wide range of ingredients (sugars, milk, fruits, egg products ...) essential for a balanced diet. Another aspect of great relevance in the manufacture of ice cream is the hedonic factor. Ice cream is consumed mainly for the pure pleasure of tasting it, the hedonic component being the main factor that triggers its consumption, considering its formulation and design a series of strategies to evoke a full range of sensations: gustatory, olfactory, visual and even, of the touch and the ear.

    ELOISE BUTLER WILDFLOWER GARDEN AND BIRD SANCTUARY WEEKLY GARDEN HIGHLIGHTS Phenology notes for the week of October 5th – 11th It’s been a relatively warm week here in Minneapolis, with daytime highs ranging from the mid-60s the low 80s. It’s been dry too; scant a drop of rain fell over the past week. The comfortable weather was pristine for viewing the Garden’s fantastic fall foliage. Having achieved peak color, the Garden showed shades of amber, auburn, beige, blond, brick, bronze, brown, buff, burgundy, canary, carob, castor, celadon, cherry, cinnabar, claret, clay, copper, coral, cream, crimson, ecru, filemont, fuchsia, gamboge, garnet, gold, greige, khaki, lavender, lilac, lime, magenta, maroon, mauve, meline, ochre, orange, peach, periwinkle, pewter, pink, plum, primrose, puce, purple, red, rose, roseate, rouge, rubious, ruby, ruddy, rufous, russet, rust, saffron, salmon, scarlet, sepia, tangerine, taup, tawny, terra-cotta, titian, umber, violet, yellow, and xanthic, to name a few. According to the Minnesota Department of Natural Resources, the northern two thirds of the state reached peak color earlier in 2020 than it did in both 2019 and 2018, likely due to a relatively cool and dry September. Many garter snakes have been seen slithering through the Garden’s boundless leaf litter. Particularly active this time of year, snakes must carefully prepare for winter. Not only do the serpents need to locate an adequate hibernaculum to pass the winter, but they must also make sure they’ve eaten just the right amount of food. Should they eat too little, they won’t have enough energy to make it through the winter.

Like CHESTNUT, a SORREL carries TWO copies of the RED gene only (or rather, non-BLACK) meaning it allows for the color RED only. SORREL possesses no other color genes, including BLACK, regardless of parentage. It is completely recessive to all other coat colors. When breeding with a SORREL, any color other than SORREL will come exclusively from the other parent. A SORREL or CHESTNUT bred to a SORREL or CHESTNUT will yield SORREL or CHESTNUT 100 percent of the time. SORREL and CHESTNUT are the most common colors in American Quarter Horses. WHAT DOES A SORREL LOOK LIKE? The most common appearance of SORREL is a red body with a red mane and tail with no black points. But the SORREL can have variations of both body color and mane and tail color, both areas having a base of red. The mature body may be a bright red, deep red, or a darker red appearing almost as CHESTNUT, and any variation in between. The mane and tail are usually the same color as the body but may be blonde or flaxen. In fact, a light SORREL with a blonde or flaxen mane and tail may closely resemble (and is often confused with) a PALOMINO, and if a dorsal stripe is present (which a SORREL may have), it may be confused with a RED DUN.

The closely allied genera of crane-flies, Leptotarsus Guérin and Semnotes Westwood, are chiefly Australian in their distri- bution, a single species of the former, Leptotarsus annulipes (Philippi), being found in Chile (see Alexander, Diptera of Pa- tagonia and South Chile, Part I, Crane-flies, pp. 21—22, 1929). Semnotes is separated from Leptoiarsus primarily on the reduction of the number of antennal segments to eight (instead of ten), the shorter terminal segment of the maxillary palpus, and the great size. Recent discoveries have shown that all of these cha- racters tend to break down and it will probably be necessary to consider Semnotes as being a subgenus of Leptotarsus. Thus, the subgenus Pseudoleptotarsus has the intermediate number of nine antennal segments; Leptotarsus caesarea has the terminal segment of the palpus shortened, while this same species, among others, has a color pattern of the mesonotum that is very similar to that of Semnotes. The novelties discussed in this paper are contained in ex- tensive series of Tipulidae in the Macleay Collections of the Uni- versity of Sydney and in the Australian Institute of Tropical Medicine.

    CHAPTER VI CORRIDOR PROTECTION DISTRICT Residential Buildings In the Corridor Protection District, construction should contribute to the improvement of the architectural and visual character of these major entrance corridors to the City and the Colonial Williamsburg Historic Area. It is important that new or replacement materials are of high quality and present a good appearance. The standards in this section refer to residential development including new development, additions and major renovations in the Corridor Protection District. ARCHITECTURAL CHARACTER The purpose of these guidelines is to develop an overriding architectural quality of design for residential buildings in the commercial corridors. A consistent high quality of architectural design and building maintenance will improve the image of the corridors and contribute to a pleasing appearance along the major entryways in our community. Construction should respect the overall streetscape, and should preserve and enhance the natural features present on the project site. These guidelines describe a range of prescriptive architectural practices that can be employed in numerous ways, but still assure that any new construction, addition or alteration of existing buildings are done in such a way as to compliment and contribute to the existing scale and character in these corridors. Architecture for new buildings or additions should not replicate or imitate historic buildings, but be an evolution of and compatible with Williamsburg’s design traditions, forms and materials. Replications of 18th century buildings are not acceptable. Traditional architectural styles associated with Williamsburg provide flexibility of design and innovative possibilities for responding to the existing pattern of development for the residential sections of the corridors, thus fitting into and building up patterns along the corridors.
