It has been confirmed that the formation of both pigments is of a very similar nature, with (E)-S-(1-propenyl)cysteine sulfoxide (isoalliin) serving as the primary precursor. Upon disruption of the tissue, isoalliin and other S-alk(en)ylcysteine sulfoxides are enzymatically cleaved, yielding prop-1-enyl- containing thiosulfinates [CH3CH = CHS(O)SR; R = methyl, allyl, propyl, 1-propenyl], among others. The latter compounds subsequently react with amino acids to produce the pigments. Whereas the onion and leek-related propyl, prop-1-enyl and methyl derivatives can form pink, pink-red and magenta compounds, those containing the allyl group yield dark blue products after reacting with glycine at pH 5.0. La Tordera, al seu pas per la vila a què dona nom, ha estat l’eix sobre el qual ha girat bona part de la vida dels torderencs. El riu ha aportat l’aigua de boca i de rec, l’energia per a moure moles farineres, per a generar electricitat o crear negocis com l’aigua embo- tellada, per exemple. Però també ha estat el malson quan s’ha sortit de mare o quan s’ha convertit en el camí que ha portat enemics vinguts del mar. En la nostra comunicació repassarem els usos i les incidències del riu que, al llarg de la història, han marcat el pols vital del poble. 1.- La defensa i el pas del riu La Tordera, com bona part dels cursos d’aigua, ha estat alhora obstacle natural quan s’havia de creuar i via de comunicació de mar cap a terra endins. Per això, al llarg dels temps, hi ha hagut dues preocupacions que han incidit en la vida del poble, la defensa i el pas del riu. La defensa A l’edat mitjana i fins ben entrada la moderna, el mar va portar la malvestat al litoral català. Sovint, més en unes èpoques que en altres, pirates musulmans atacaren els pobles costaners. Una de les ràtzies musulmanes de l’alta edat mitjana, la d’Ibn Abí Hamama l’any 935, que venint des de Mallorca havia atacat i saquejat poblacions com Empúries, Pals i Maçanet, sembla que també hauria afectat la zona marítima de Palafolls i que hauria remuntat la Tordera. -

Illustration by Megan O’Dea ONIONS – Allium cepa The cultivated species of onions are thought to be native to Central and Southwest Asia—Iran, Afghanistan, and Pakistan. Evidence of cultivated onions dates back to 2,800-3,200 bc in Egypt, with onions in evidence both in the decoration and hieroglyphics of the pyramids. The bulbs were also used as part of the embalming and mummification process. Onions are biennial herbaceous plants commonly grown as annuals. They are seeded in the fall or early spring, harvested in the summer, and used fresh or stored for winter. They feature a restricted, shallow root system, with unbranched, pure white succulent roots measuring 6 x 6 inches. Much like the perennial grasses of the steppes and plains, Alliums are constantly sloughing off old roots (almost on a daily basis) and developing new feeding roots. As a result they add significant amounts of organic matter to the soil and contribute to much-improved surface soil structure. -

Geologia i geomorfologia INTRODUCCIÓ Catalunya es troba situada al nord-est de la Península Ibèrica, entre la mar Mediterrània, els Pirineus, l’Aragó i la Comunitat Valenciana. La seva orografia ve estructurada per dues grans unitats: la serralada pirinenca, on s’assoleixen altituds superiors als 3000 m, i les serralades litoral i prelitoral, on destaquen els 1712 m del Montseny. El territori muntanyós i les diferencies altitudinals remarcables confeccionen una xarxa hidrogràfica que està condicionada entre d’altres per dos factors: el sòl i la coberta vegetal. A la multitud de combinacions naturals possibles, roca nua, sòls agrícoles amb conreus herbacis, arbustius i arboris, de secà o regadiu, prats alpins al Pirineu, boscos de diverses espècies de coníferes, de plannifolis i de caducifolis, garrigues, brolles seques, aiguamolls litorals, etc., s’hi afegeix l’originada per la presència i activitats humanes: alteracions de la coberta vegetal, assentaments humans grans vials etc. L’ocupació del territori, amb la seva consegüent impermeabilització, a la que s’ha d’afegir l’afecció al drenatge natural de les aigües pluvials per l’efecte barrera, ha anat augmentant sobretot en les darreres dècades amb actuacions urbanístiques, noves vies de comunicació, etc. que han suposat severs impactes sobre el traçat de les lleres i sobre els terrenys que les envolten. Aquesta severa transformació ha tingut una forta incidència sobre el natural discórrer de l’aigua, des de diversos l punts de vista: transformació pluja-escorrentiu, propagació de riuades, i augment del risc i pellirositat respecte als danys que aquestes poden causar, al haver estat ocupades zones potencialment inundables. -
