BEVERAGE MENU HOKUSETSU SAKE

The Hokusetsu Brewery on Sado Island in the Sea of Japan has been operated by the Hazu family since 1871. The name Hokusetsu, or "Northern Snow," was chosen to reflect the ideal sake brewing conditions on the island during the coldest days of winter.

Chef Nobu first experienced Hokusetsu sake in 1987 when his Japanese rock‐musician friend brought a bottle to the original Matsuhisa restaurant in Beverly Hills. Impressed by the quality, Nobu obtained exclusive rights to sell Hokusetsu sake in the United States.

Whisky production in Japan began in 1870 and commercial production started in 1924 at the . Suntory is the oldest commercial producer of whisky in Japan. Over this time, they have established a wide range of styles from various regions. Yamazaki, a classic from Japan's original distillery. Hakushu, which draws waters from the clean mountain streams near the mountain forest distillery nestled deep in Japan's Southern Alps. , which is meticulously crafted to create a harmonious blended option. Toki, meaning "time" in Japanese is a blend that takes into consideration Suntory's lengthy history.

NIKKA WHISKY

Masataka Taketsuru, "Father of Japanese Whisky" established Nikka Whisky in 1934 and built its first distillery in Yoichi, Hokkaido. The area was selected as the terrain and climate are similar to those of Scotland. He established Nikka to introduce the joys of authentic whisky to Japan.

KAIYO WHISKY

A relative newcomer to the game, Kaiyo is known for the use of the highly sought after Mizunara Oak. The flavors the oak imparts is distinctive of the brand and creates rich hues with notes of butterscotch and cashew. The cask strength is robust and generates a warm lingering heat.
