iv v WELCOME WELCOME

ON BEHALF OF THE ALL CLUB MAY I WISH YOU A VERY WARM WELCOME TO WIMBLEDON 2015 . As you know the dates of Wimbledon have changed by one week in order to create a three week gap between Roland Garros and Wimbledon . The three week gap will give the players more time to prepare for Wimbledon and additional time to recuperate from the demands of playing Roland Garros . It will also provide the chance to spend further time practising and taking advantage of the enhanced competitive opportunities as part of a longer season in the build-up to The Championships . Consequently, we hope the players will arrive at The Championships having had the best possible preparation and in a condition which allows them to demonstrate their talent and skills on what is widely regarded as the finest stage in world tennis . It is a stage which could not be built without the support of our debenture holders and I would like to take this opportunity to reflect on the success of the most recent Centre Court debenture issue and acknowledge the hugely important role that our debenture holders play in helping to secure the long-term future of The Championships . The proceeds of this debenture issue allow us to continue our investment programme, which will include building a roof over No .1 Court, as well as a rolling refurbishment of Centre Court debenture restaurants and bars over the next few years . This year’s Championships promises to be another enthralling event and I very much hope you have an enjoyable and memorable visit to Wimbledon .

46 47 THE COURTSIDE THE COURTSIDE

ALBERT ROUX obe

Albert Roux obe is simply one of the most influential and revered chefs in the world . Known as the ‘godfather of gastronomy’, Roux was responsible for opening the first Michelin starred restaurant in London, Le Gavroche, and for being the inspiration behind the Roux Scholarship, training top names in cuisine including , Gordon Ramsay and Marcus Wareing .

We are extremely proud of our association with Albert Roux obe and are delighted that he has designed some signature dishes for our Courtside Restaurant menu at this year’s Championships .

48 49 THE COURTSIDE THE COURTSIDE

TOM AIKENS Tom Aikens is one of the UK’s most acclaimed and inspirational chefs, owing to his innovative style and creative interpretation of modern French cuisine . After he left college Tom worked at Michelin Starred, David Cavalier’s restaurant in Battersea, leaving to work for Pierre Koffman’s in Chelsea, which gained a third Michelin star during his time there . Tom also worked with Philip Britten at the Capital Hotel and as a sous chef at Pied à Terre in Charlotte Street, under Richard Neat . Tom gained further inspiration and invaluable knowledge in Paris, cooking with Jöel Robuchon, and Gerard Boyer at Reims . Tom returned to the UK as Head Chef of Pied à Terre, where, at 26, he became the youngest British chef ever awarded two Michelin stars . Here he stayed for five years . CAMBRIAN MOUNTAIN LAMB – MID WALES Inspired by HRH The Prince of Wales, who is President of the Cambrian Mountains Initiative (CMI); The Cambrian Mountains comprise a distinctive upland, Welsh speaking area forming the heartland of Wales. It is an area of exceptional, unspoilt landscape that supports valued habitats, species and ways of farming that have roots stretching back to the Middle ages. The CMI premium quality Welsh lamb is born and reared in the Cambrian Mountains region of mid-Wales by a group of 21 producers who are part of the Cambrian Mountains group. The lamb producers who supply the Cambrian Mountains Lamb adhere to strict principles to ensure best practice land management, maintain valuable habitats and eco-systems and actively encourage vibrant rural communities. Native breeds in the Cambrian Mountains are from traditionally ‘hefted’ flocks on farm-assured farms that use the old ‘Hafod and Hendre’ system. After a winter in the valley, the lambs are shepherded up to the hills for the long summer grazing on natural pastureland rich in varied grasses and herbs. This results in a special, slightly lighter weight lamb (around 16—18kg) with great conformation for succulent, juicy meat with a delicate, sweet flavour. We work with the CMI to ensure that the lamb is ready for Wimbledon. It is a seasonal product and as such is available from late June so we have one farmer Rhys who brings his lambs earlier for slaughter to ensure we can have them in time for our Wimbledon menus.

SMOKED AND POACHED SALMON Richard Cook, Owner of the Severn and Wye Smokery The Rivers Severn and Wye are synonymous not only with wild salmon but also with, the elver and eel, the two rivers being one of Europe’s biggest elver fisheries . Severn & Wye Smokery is situated between these two great salmon rivers on the edge of the Royal Forest of Dean . Starting with two flagship products, smoked wild salmon and smoked eel, the business has grown to produce a full range of smoked fish products . The production techniques and smoking processes are still very traditional and grading, filleting; curing and cutting are still mostly done by hand. We chip all our own oak wood for smoking, which gives our smoked products a unique distinctive taste. We can either hang or lay out the fish for smoking, depending on your preference. Richard works with the chef to develop the exact specification and flavour for our salmon at Wimbledon.
