Funds were appropriated, and this bulletin contains the final results of this particular phase of the butter manufacturing studies by the Oregon Agricultural Experiment Station. The investigation included a study of the chemical and physical properties of the milk fat produced in typical irrigated alfalfa producing areas of eastern and southern Oregon and in other parts of the state. A report of this particular phase of the study has already been made. On the basis of the experimental results obtained, a satis- factory method of butter manufacture has been developed. It is about class, consumption and culture; it is also about food and identity. In the mid-nineteenth century, restaurants served French food prepared by European chefs to elite Americans with aristocratic pretensions. “Turning the Tables” explores the subsequent transformation of aristocratic restaurants into public spaces where the middle classes could feel comfortable dining. Digging deeply into the changes restaurants underwent at the turn of the century, I argue that the struggles over restaurant culture—the battles over the French-language menu, the scientific eating movement, the celebration of cosmopolitan cuisines, the growing acceptance of unescorted women diners, the failed attempts to eliminate tipping—offer evidence that the urban middle class would play a central role in the construction of twentieth-century American culture.

The question- naire was mailed to dairy and processed foods cooperatives included in the previous directory. The survey was expanded to include regional supply cooperatives, fresh fruit and veg- etable cooperatives with sales greater than $19,999,000 in 1987, and cooperatives included in Directory of U.S. Agricultural Cooperative Exporters. Citrus packing houses were added because of their affiliation with regional citrus marketing cooperatives. A total of 236 questionnaires were mailed and 211 were returned, a response rate of 89 percent. Almost 70 percent of these respondents reported use of brands. These 144 coopera- tives are listed in the directory using 1,016 brands. Mention of company and brand names in this publication does not signify endorsement over other companies’ products and services.
