Coupland Professor of Food Science Honors Adviser * Signatures are on file in the Schreyer Honors College. i ABSTRACT Chemesthetic stimuli, such as capsaicin (chili peppers), zingerone (ginger), and menthol, elicit complex sensory responses that are often difficult to describe, given the range of temperature, touch, and pain sensations experienced. Recently, the sorting task has been applied to chemesthetic stimuli in an attempt to minimize linguistic contamination of perception. Given the growing influence of Hispanic culture in the U.S., we were interested in exploring how Hispanic and American ethnic backgrounds influence the perception of chemesthetic stimuli and the attributes used to describe the stimuli in two languages. The sorting task is especially well- suited for use in cross cultural studies because it relies on the cognitive process of categorization rather than the language-based process of description. A group of native Spanish-speaking Hispanic participants sorted nine chemesthetic stimuli and two tastants into groups based on perceived similarity and then labeled each group with a description in Spanish. The results of this data collection, analyzed by multidimensional scaling, were compared to the equivalent data collected from another group of native English-speaking individuals. A significant difference was found between the perceptual mapping of chemesthetic stimuli of Spanish and English speakers; the Spanish cohort showed less distinction between chemesthetic stimuli, creating fewer clusters with higher stress. Textual analysis showed that the Spanish speakers were less consensual regarding attributes but provided a greater number of unique descriptors than the English speakers. Personality measures and food involvement data were also collected from these participants to further understand the effect of ethnicity on perception of chemesthetic stimuli. Our findings suggest that native Spanish-speaking Hispanics, specifically those who have emigrated to the U.S., are more idiosyncratic in their perception and description of chemesthetic sensations Materials and Methods: 3,4-benzopyrene-induced carcinogenesis model using Wistar rats was used. Leiomyosarcoma cells from Wistar rats were used to study carvacrol antiproliferative activity in vitro. The carvacrol antiplatelet properties were investigated with platelet aggregation assay and flow cytometry technique. The production of thromboxane B2, final metabolite of platelet aggregation, was evaluated by radioimmunoassay. Results: Our study revealed significant anticarcinogenic properties of carvacrol. We observed 30% decrease of 3,4 benzopyrene carcinogenic activity in vivo. Antiproliferative activity of carvacrol (IC50) was 90 μM and 67 μΜ for 24 h and 48 h of incubation of cells, respectively. Carvacrol possessed also mild antiplatelet effect, inducing the decrease of thromboxane A2 production in platelets and as a result — restrictive expression of the GPIIb/IIIa platelet receptor. Conclusion: Our data demon- strated that carvacrol possesses anticarcinogenic, antiproliferative and antiplatelet properties.

In the 19th century, the culinary cultures of the rural and urban worlds started to grow closer due to the development of trade, the first phase of modernization of housing and changes in kitchen equipment. Many people from the country started to work in factories and in cities. Exchange of information was more intense and first cookbooks were published. In spite of these facts, up to these days the Slovak cuisine has not lost its unique rural character by which it differs from the cuisines of neighboring countries.

Twenty-three isolates were screened for resistance to seven antibiotics. Two resistant and two susceptible strains were chosen for the study. S. enterica cultures (105 CFU/ml) were added to different concentrations of cinnamaldehyde and carvacrol (0.1, 0.2, 0.3, and 0.4% [vol/vol]) in PBS, mixed, and incubated at 37uC. Samples were taken at 0, 1, 5, and 24 h for enumeration. Celery and oysters were inoculated with S. enterica (106–7 CFU/ml), treated with 1% cinnamaldehyde or 1% carvacrol, incubated at 4uC, and then sampled for enumeration on days 0 and 3.

In this study, the effect of selected EO compounds (eugenol, trans-cinnamaldehyde, citronellol, and terpineol) was assessed on Escherichia coli biofilm control by plate count, resazurin assay, and Syto® 9/PI (-/propidium iodide) staining coupled with flow cytometry (FCM) and confocal laser scanning microscopy (CLSM). The selected EO compounds effectively inhibited the growth of planktonic E. coli at low concentrations of 3–5 mM, revealing a high antimicrobial activity. EO compounds markedly interfered with biofilms too, with trans-cinnamaldehyde causing the most prominent effects. Its antibiofilm activity was manifested by a high reduction of cell metabolic activity (>60%) and almost complete reduction in biofilm cell culturability.

ABSTRACT This study focused on characterizing the Hydrophobic and Hydrophilic fractions of Teucrium alopecurus in the context of cancer prevention and therapy. The goal was also to elucidate the molecular mechanisms involved and to determine its efficacy against cancer by triggering apoptosis and suppressing tumorigenesis in human colon cancer. The data here clearly demonstrated that oily fractions of Teucrium alopecurus act as free radical scavengers, antibacterial agent and inhibited the proliferation of HCT-116, U266, SCC4, Panc28, KBM5, and MCF-7 cells in a time- and concentration- dependent manner. The results of live/dead and colony formation assays further revealed that Teucrium essential oil has the efficacy to suppress the growth of colon carcinoma cells.
