Fall 2019 Northarvest Bean Grower 25 CHUCKWAGON CHILI Ingredients: 1 teaspoon vegetable oil 1 can (16-ounce) tomatoes, chopped ½ pound lean ground beef 3 cups water 1 large green bell pepper, diced 2 tablespoons cornmeal 1 large onion, finely chopped 1 tablespoon chili powder 1 teaspoon garlic powder or 1 clove 1 teaspoon dried oregano minced fresh garlic 1 teaspoon cumin 2 cups (or 1, 15 ½-ounce can) cooked 1 teaspoon paprika pinto beans, drained and rinsed Salt and pepper, to taste 2 cups (or 1, 15 ½-ounce can) dark red kidney beans, drained and rinsed

Directions: 1. Heat oil in a large stockpot over medium-high heat. Add ground beef and cook until browned. Drain off excess fat. 2. Add peppers, onions and garlic; cook for 3 to 5 minutes. 3. Add remaining ingredients. 4. Simmer, uncovered, on low heat. Stir occasionally until thick. Prep Options: Raid the produce section to make this dip fun. Red bell peppers, as well as carrots and cucumbers, also make good dippers for this hummus. Garnish with sour cream, cheddar cheese and green onions.
