Corresponding author: [email protected] Paper No. 86 Received: 20 October 2014 Accepted: 20 July 2015 Abstract To determine the sensory quality of the developed product and the nutritive value of different food products made by the incorporation of fresh faba bean pods at different levels. Food product were prepared from, “Rava Upma” and “Dal Vada” by incorporation of fresh faba bean pods mix at the level of 20%, 30% and 40% as treatments T1, T2 and T3 respectively. T0, without incorporation of fresh faba bean pods served as control. The replicated three times for all two food products and data obtained investigation were statistically analyzed by using analysis of variance (ANOVA) and critical difference (CD) techniques. Sensory evaluation was carried out by using nine point Hedonic scale. Chemical analysis was carried out by the standard procedure of AOAC (2005). On the basis of findings, it was observed that in case of “Rava Upma” 30% incorporation level (T2) was adjudged as the best with regard to color, body and texture, taste and flavour and overall acceptability. In case of “Dal Vada” 40% incorporation level (T3) adjuged the best with respect to color, body and texture, taste and flavour and overall acceptability.

    Rasam Recipe | Tomato Rasam | Thakkali Rasam with dal Rasam is a south Indian Soup, prepared with tomato, dal and various aromatic spices. To me, they are the comforting food next to idly. They are mildly tangy, watery in consistency and a medley of fresh aroma and flavors. South Indian meals are incomplete without rasam. Many family in south India makes rasam everyday. They are the soul food to many homes. Coming to the recipe, everyone makes rasam in a different way and this is my version of tomato rasam recipe, without tamarind, here I added toor dal in additional to tomatoes, to get a nice taste and also for protein. The one thing I like most in rasam is the lovely flavor and fresh aroma which comes from coriander leaves, asafoetida and garlic. Making of rasam is easy and can be made fast, they are good for digestion as it has lot of spices in it. Also it is a good food for people with fever and cough. Tomato rasam can be served with potato fry or vegetable fry. I had it with butterbeans poriyal. Ingredients 4 Tomatoes 3 Tbsp of Toor Dal Salt to taste Water as needed To Make a Rasam Powder 1 Tsp of Whole Black Pepper 2 Tsp of Whole Cumin 2 Tsp of Coriander Powder 3 Garlic Cloves, Big To Temper 2 Tsp of Oil 1 Big Dried Red Chilly 1 Tsp of Mustard Seeds 1 Tsp of Urad Dal 1/8 Tsp of Fenugreek Seeds Pinch of Asafoetida Few Curry Leaves 1/4 Tsp of Turmeric Powder To Garnish Handful of Coriander leaves, Finely Chopped Method Soak the dal in water for 15-20 minutes, drain the water and wash it.

    International Journal of Science and Research (IJSR) ISSN: 2319-7064 ResearchGate Impact Factor (2018): 0.28 | SJIF (2019): 7.583 Consumption of Street Foods - Pre Corona Days Anjali Devi C Professor, Department of Food & Nutrition Osmania University Hyderabad, India Abstract: Street foods of different categories –breakfast foods, chaat items and items at curry point have become very popular and increasing in cities over the years. Consumption pattern of street foods was collected from 220regular visitors using a structured questionnaire, Three street vendors, one from each category were interviewed regarding the knowledge of safety measures and the extent of usage. The respondent group consisted of Hindus 76.5 percent and 23.5 percent Muslims. 85.7 percent are nuclear families and 85.7 percent are non –vegetarians. Respondents age ranged between 20 years to 80 years. Family size ranged between 2 members to 10 members. Consumption of breakfast foods likeidly, idly and vada and dosa daily was reported by 5.2, 5.7 and 7.8 percent respectively. Among the chaat items, chole and panipuri are most preferred by 50.1 and 39.5 percent respectively. Samosa and mirchibajji are the two snack items consumed by 50 percent respondents. At the curry point counter any one of several items displayed, is picked daily by 50 percent of respondents. In general, eating at the street food stalls has become common and is increasing, .
