MANGO UPSIDE-DOWN CUPCAKES n 2 cups Florida mango, diced small n 1/2 cup light brown sugar n 2 tablespoons unsalted butter n 1 teaspoon vanilla extract n 1 cup whipped cream (store-bought or homemade) n Fresh mint, for garnish (optional) n 1 cake mix (store-bought or homemade) Preheat oven to 375 degrees if using the homemade recipe (if using store-bought, follow package instructions). Prepare cupcake batter using box mix or homemade recipe provided. Once the batter is prepared, place cupcake liners in the cupcake pan and set aside. In a small sauce pan over low heat, combine the brown sugar, butter, vanilla and mix until smooth. Add the diced mangoes and stir to combine. Remove from heat and allow to cool for 5-10 minutes. Once cool, add a tablespoon of mango mixture to each cupcake liner. Using an ice cream Fresh From Florida scoop, evenly divide the batter into the liners (about 2/3 full) do not overfill. Bake for about 16-18 minutes (if using the scratch-made recipe) or until a toothpick comes out clean when inserted. Set aside to cool completely. Top with whipped cream and mint sprig, if desired.

MANGO CUPCAKES n 2 Florida mangoes, diced small Vanilla Glaze n 1 cup powdered sugar n 2 teaspoons milk n 1 teaspoon pure vanilla extract n Pinch of sea salt Homemade Cupcake Batter n 1 1/2 cups unbleached all-purpose flour n 1 cup Florida sugar n 1 teaspoon baking powder n 6 tablespoons unsalted butter, softened n 2 large eggs n 1/2 cup milk n 2 teaspoons pure vanilla extract n 1/4 teaspoon salt Preheat oven to 375 degrees. Place the cupcake liners in the cupcake pan and set aside. To prepare the homemade batter, sift all the dry ingredients into a medium-size bowl. Mix in the softened butter until it looks crumbly (the butter does not have to be fully incorporated). In a separate bowl, whisk the wet ingredients together and add this mixture to the dry ingredients, stirring to combine. If using store-bought cake batter, follow the package directions. Using an ice cream scoop, evenly divide the batter into the liners about two-thirds full (do not overfill). Fold in half of the diced mangoes into the batter. Bake for about 16-18 minutes or until a toothpick comes out clean when inserted. Cool completely before frosting. To make the glaze, combine powdered sugar, milk, salt and vanilla extract. Stir to Fresh From Florida combine until completely smooth. Drizzle each cupcake with the glaze and top with remaining diced mangoes.

Combine diced mango and bread (or cake) and pour into casserole dish. Combine milk, heavy cream and honey in a small sauce pot. Heat over low just until combined.
