    Raspberry Pepper Jelly FROM THE KITCHEN OF DEBBIE MACOMBER This pepper jelly gets kicked up a notch with the addition of raspberries. With numerous uses like topping a burger, glazing salmon, the base for a vinaigrette, and serving alongside cream cheese and crackers, this is a smart use of your crop of raspberries and jalapeño peppers. A jar of this raspberry pepper jelly makes a wonderful hostess gift as well! Makes 6 Half Pints Ingredients Directions Puree raspberries in a blender. Push puree through 3 cups raspberries a sieve until all the juices are extracted from the 6 jalapeños, minced pulp; discard seeds. 1 green bell pepper, minced In a large pot, bring the raspberry juice, jalapeños, 1 ½ cups sugar bell pepper, sugar, and vinegar to a boil. Boil for 3 minutes. Whisk in the pectin and bring to a 1 cup apple cider vinegar vigorous boil that does not stop bubbling when stirred. Boil for 1 minute. Remove from heat and 1 box no-sugar-needed pectin skim off any foam with a metal spoon. 6 pint canning jars and lids, Ladle into jars, leaving a ¼ inch headspace. Wipe sterilized and kept warm rims clean, then screw on lids. Place the jars on an elevated rack in a canner. Fill pot with enough water to cover the jars by 2 inches; cover. Bring to a boil, then process jars for 5 minutes. Remove jars to a towel and let sit, upright, for 24 hours. Check the seal by pressing on the lids. If it springs back, it did not seal and must be refrigerated immediately and consumed within 3 weeks.

I've heard of people making meatballs with jelly. This seems like it would taste great paired with a sweet jelly. Sweet and spicy meatballs sound really good. 3. Put it on biscuits with some butter. To die for. 4. Grilled cheese, corn bread, over brie... 5. Cook it down a bit and using it as a sauce for chicken. You could also add balsamic vinegar or lemon to it. 6. Few things make a good pork chop taste better than jalapeno jelly. You can also add a bit of rice when in need of a quick meal with a bit of flavor. 7. Use it as a glaze for pulled pork (in the slow cooker), with some adobo sauce. 8. Then save the rest for the recipe. 1 Jar Texas Gourmet’s Habanero Pepper Jelly 2 Cloves fresh garlic – minced 2 Tsp. Sesame seeds 1 T. Black pepper 2 Tsp. Soy Sauce 1 Tsp. Coarse mustard 3 Tsp. Olive oil Powdered ginger Preparation Remove the breasts from the bone, carefully inspect, rinsing and removing any pellets or feathers from the meat, then slice long ways into ½ “thick strips- you should have at least 24 strips, then place in a bowl of iced brine water (3 T. sea salt to 1 qt. of water along with 25 to 30 ice cubes, add water if needed to fully submerse all meat) for 1 hour, pour off the water, then refill the bowl with straight cold water and soak for an additional 30 minutes.

    Brat Sandwich with Onions and Sweet Pepper Salad: Our butcher makes these brats for us, right here in Reno. They are so delicious!! Ingredients: Brats Salad Greens Salad Dressing (Pepper Jelly in container) Peppers Onion Pantry Items: Butter, Olive Oil, Apple Cider Vinegar, Salt Brats Cut your brats apart so they are not connected. Heat a little olive oil in a pan and add your brats. Cook the brats on medium/high for about 5 minutes then turn them. Cook for another 5 minutes. Turn again and cook for another 5 minutes. They need about 15 minutes to cook. Brats need to be cooked through. If they are pink in the middle, they need to cook longer. Onions While the brats are cooking… Slice your red onion into thin slices. Heat a pan and add 1 Tablespoon of Butter and 1 Tablespoon of olive oil. Add the onions and cook them down until they are clear, and add some salt to taste. Add 1 Tablespoon of apple cider vinegar (or whatever you have, red wine or white will work too) and 1 teaspoon of sugar. Stir the sugar and vinegar into the onions and cook the onions for another 5 minutes. (If you do not like vinegar you do not need to add it. They are delicious without it too. You will top your brats with the onions and use some of the onions for your salad. Salad Wash and chop your greens Dress the greens with the Pepper Jelly dressing Slice your peppers thinly and place on top Plate Slice your hoagie roll in half.
