RecipeTequila Lime Chicken Corner By foodieforone.com Enjoy a taste of the tropics with this juicy, marinated chicken. Create street tacos or enjoy chicken strips all on their own with a surge of protein. The night before, marinate one pound of boneless, skinless chicken strips that you have trimmed of all visible fat. MARINADE ½-ounce tequila; 1-ounce lime juice or 1 lime; 1-ounce olive oil; 2 ounces orange juice; 2 table spoons chopped cilantro(no stems); 3 garlic pods minced; ¼ teaspoon of each:; Kosher salt; Cumin; Chili powder; Garlic powder; Onion powder; Fresh cracked or black pepper DIRECTIONS Cooking time varies but, if cut small, 4-5 minutes per side is a good estimate. You can always cut the largest tender to inspect doneness. Once cooked let rest several minutes. Pro Tip is to cut strips fairly small – ¾ inch wide by 3 inches is a great size. Pieces will marinate better and cook up faster. Mix ingredients and add to chicken pieces in a plastic bag or tightly sealed container. Refrigerate overnight. Remove chicken from marinade and pat dry with paper towels. You want chicken strips as dry as possible. Lightly salt and pepper chicken strips with kosher salt and cracked pepper. Add a small amount of a high heat oil such as avocado oil to barely cover surface area of a skillet and heat to just over medium. Add the chicken tenders and grill to perfection. Build a street taco with a tortilla, chicken pieces, shredded smoked Gouda, purple onion, cilantro and tomato. Enjoy.
