Die Landesküche von Laos ist beeinflusst von anderen asiatischen Küchen wie der thailändischen, chinesischen und vietnamesischen, hat aber auch französische Einflüsse. Hauptbestandteil der laotischen Küche ist Klebreis (Khào Niaw). Es gibt ihn in den Farben weiß, lila, pink und schwarz. Er wird nicht wie andere Reissorten gekocht, sondern gedämpft. Man rollt ihn mit den Fingern zu kleinen Bällchen und tunkt diese in würzige Dips (Jeow). Man kann den Klebreis auch zu einer Art kleinen Löffel formen und befördert damit weitere Zutaten in den Mund. Um die Finger sauber zu halten und den Reis davon abzuhalten in das Essen zu fallen, sind laotische Gerichte nicht so „suppig“ wie z.B. thailändische Curries. Reichhaltige Mahlzeiten werden in der Regel in Gesellschaft gegessen und bestehen typischerweise aus Suppe, Klebreis, Fleisch, Fisch oder Hühnchengerichten, Gemüse und natürlich „Jeow“. Anders als die westliche Speisenreihenfolge (Suppe/Vorspeise/Hauptgericht/Dessert) werden in Laos alle Gerichte gleichzeitig serviert und mit allen am Tisch geteilt, indem jeder seinen Löffel oder seine Finger in das Essen taucht. Stäbchen werden in der Regel nur für Nudelsuppen verwendet, um die festen Bestandteile aus der Suppe zu angeln. Während des Essens wird in der Regel nur Wasser gereicht. Weit verbreitet ist auch ein Zitronengrastee. Alkoholische Getränke wie Bier und Schnaps werden erst nach dem Essen angeboten. Was nicht heißt, dass man als Tourist kein Bier oder Wein zum Essen trinken kann. Zumindest in Luang Prabang sind die Restaurants auf westliche Gepflogenheiten eingestellt. Kräftige Aromen sind charakteristisch für laotische Speisen und bilden eine harmonische Kombination aus den Geschmacksrichtungen bitter, salzig, scharf und sauer.
