Trans-fer to the low-heat side and continue to cook, flipping occasionally, until an instant-read thermometer inserted in the thickest part without touching bone registers 160°F, 15 to 20 minutes more. 5. Return the chicken to the hot side of the grill. Brush generously with the basting sauce and cook, turning occasionally and brushing with more sauce, until slightly charred and the internal temperature reaches 165°F, about 5 minutes. 6. Drizzle the chicken with honey and sprinkle with salt.

    Catch Up On Ketchup History Ketchup is not always used to refer to what we know as ketchup. It has not even always been made with tomatoes. The most popular theory is that the word ketchup is derived from the Chinese word koechiap which basically means the brime of pickled fish or shellfish. In the late 17th century, this koechiap arrived in England where it was translated as catchup , and eventually ketchup. This is the name that has stuck and the ketchup is popular throughout the world. What about Heinz? Henry J. Heinz began making ketchup in 1876. The original recipe is still used today. He was not the first one to make ketchup with tomatoes though. Tomatoes are native to the Andes, and were brought back to Europe in the early 1500's by a group of Spanish Conquistadores. However, his ketchup is the most popular with a 56.7% share of the ketchup market. H.J. Heinz picked the term "57 Varieties" simply because he thought 57 sounded good and he made it a goal to come up with 57 different products. There are now almost 400 different Heinz varieties. Interesting Facts l Ketchup is used more than any other condiment in the United States. l It can be found in 97% of all kitchens in the United States. l Children under the age of 13 consume 50% more ketchup than people in other age groups. l Each person eats about 3 bottles of ketchup per year. l Four tablespoons of ketchup, the average amount eaten with an order of fries, has the same nutritional value as an entire ripe tomato.

    Chutney Glazed Brisket Recipe from Big Green Egg Cookbook/Andrew McMeel Publishing. Ingredients: 1 ½ cups mango chutney 1 cup apple cider vinegar 1 cup tomato sauce ½ cup ketchup ½ cup firmly packed brown sugar 1 tablespoon Worcestershire sauce 1 (6-pound) beef brisket 2 cups white vinegar ¾ cup Tricolor Pepper Rub (See Below) 2 cups Beer Mop (See Below) Directions Set the EGG for direct cooking with the porcelain coated grid. Preheat the EGG to 200ºF/94ºC. Mix the chutney, apple cider vinegar, tomato sauce, ketchup, brown sugar, and Worcestershire sauce in a medium bowl, until all the ingredients are combined, and set aside. Place the brisket in a large bowl, pour the white vinegar over the brisket, and let the brisket sit for 5 minutes. Transfer the brisket to a rimmed sheet pan and season all over with the pepper rub. Place the brisket on the preheated grid and close the lid of the EGG. Cook for 30 minutes, mopping with the beer mop every 15 minutes. Turn the brisket over and close the lid of the EGG.
