When India was linguistically divided and Kerala was formed in 1956, the Malabar district was geographically divided further for easy administration. The modern day Malabar, comprises of Kozhikkode, Malappuram and few taluks of Kasarkod, Kannur, Wayanad, Palakkad and Thrissur. The Malappuram and Kozhikkod region is predominantly inhabited by Muslims, colloquially called as the Mappilas. The term 'Malabar' is said to have etymologically derived from the Malayalam word 'Malavaram', denoting the location by the side of the hill. The cuisine of Malabar, which is generally believed to be authentic, is in fact, a product of history and a blend of cuisines from all over the world. Nelson PITAS AND PASSPORTS: ARAB FOODWAYS IN THE WINDSOR-DETROIT BORDERLANDS Abstract Virtually all North American border foodways literature focuses on the U.S. Southwest, where an international boundary runs through an ethnic foodway. This research is enormously valuable, but Mexican food in the Southwest does not tell us much about a diasporic border-food community. What do we learn when we study an international boundary running through an ethnic minority, such as the Arab community that exists on both sides of the Windsor/Detroit border? When a foodway already struggles to find its identity within a hegemonic culture, how does that food community negotiate an international state difference right in its midst? Before 9/11, a “soft” border allowed for the existence of a large, interactive, regional cross-border Arab foodway. Since then, the thickening of that border has rapidly accelerated the formation of an “Arab Canadian” foodway in Windsor. In the fall of 2017, I went to lunch at Windsor’s most upscale Lebanese restaurant, Mazaar. As I laid eyes on the menu, one dish jumped out at me: shawarma poutine.

In Czernowitz we did NOT add cinnamon, what a heresy! Procedure: Bring slightly salted water to the boil in a large pot. Cut ball of dough in half. On a floured board, roll out each half to a thickness of 1/2 cm.With a pastry brush, brush one sheet of dough with the egg white. Place plum halves, cut side down on the dough, spacing them about 7cm. or 2.5" apart. Cover with the other sheet of dough. Using a glass of the right size, holding it upside down, cut dumplings from the two sheets of dough, enclosing a half plum in each dumpling. To prevent the dough from sticking to the glass, dip the glass rim into a bowl of flour before (plum dumplings) each cut. VERY IMPORTANT: With your fingertips press the edges of the dough While generally considered an Austrian dish of Czech origin, my mother's together, all around each dumpling. Cook them until they are tender to the a knife’s touch, about six minutes. Add the scallions and cook them for about three minutes, then remove everything to a glass bowl to hold them for later use. Clean, slice and cube the fresh turnips. Add them to the sauce pan. Toss the cubes in the oil to completely coat them and cook over medium heat until they begin to brown. Use additional oil if needed. When brown on all sides, add beef stock and black pepper, coarsely ground. Bring to a boil. After five minutes at full boil add the cooked onion/scape/scallion mixture to the pan and continue boiling for about ten minutes. Turn off heat and allow the mixture to rest for about five minutes, then add fresh tarragon leaves to taste. Lightly salt. When cooled, but not cool, use an immersion blender to combine the mixture creating as thick a vegetable “soup” as possible. Stir in the sour cream and fresh chives.
