Each month we’ll choose a winner and donate to their charity. See our website for more details. Directions – Please also see the video at www.csons-ludlow.co.uk/csonsathome/ 1. Set oven to 180c. 2. Place beetroot (1) on tray in oven for 10-15 minutes or until slightly caramelised. 3. Empty asparagus, butter, capers (2) into a small frying pan on medium heat and add a splash of water to help steam the asparagus. 4. Turn the heat up on the frying pan after a few minutes to boil off the excess water and make sure the butter is fully melted. Then remove from heat. 5. Now it’s plating time! Once beetroot is ready, place the pieces randomly in the centre of the plate. 6. Place the asparagus spears in between the beetroot at an upward angle. Spoon the rest of the contents of the pan over the beetroot and asparagus. 7. Dot the beetroot sauce (3) over the top. 8. Drizzle the kefir dressing (4) in a circular motion on and around the food. Do the same with the green sauce (5). 9. Garnish with the wild garlic flowers (6). Suppliers The asparagus comes from RT Lee & sons, Quatt near Bridgnorth. The beetroot comes from Harehill farm in Edgton, Shropshire. www.harehillfarm.co.uk We foraged the green sauce leaves and wild garlic flowers from the Shropshire countryside. We made the kefir using milk from our friends at Mawley town farm. www.mawleytownfarm.co.uk Contains milk & sulphites.
