DESCRIPTION The Mediterranean is the deep, blue heart that gives life to the countries that surround it. From a western perspective, control of the world began with control of the Mediterranean, and thus it has been the seat of empires for millennia. The course consists of a study on the food culture of the countries and regions surrounding the Mediterranean Sea. Students will explore how geographical and cultural influences reflected and shaped the use of different food products, cooking methods, service styles and the many other factors that have lead to the current cuisine. Throughout time many different factors, such as family traditions, agriculture, cooking methods, and food products, have influenced the food culture of the Mediterranean region. Students will be introduced to the evolution of the Mediterranean cuisine, and to the regional differences with reference to these factors. The course will also closely examine the typical products that characterize the Mediterranean Diet such as olive oil, pasta, rice, vegetables and fruits, dairy products etc., examining their history, economic relevance, production, nutritional value and different uses around the Mediterranean. A selection of traditional dishes from Italy, southern France, Spain, and Croatia will be presented to the students and discussed. 2. OBJECTIVE The course objective is to show students the cultural and social relevance of one of the most appreciated cuisine in the world. Students will develop the ability to properly distinguish the most typical dishes of the Mediterranean Countries. Through the understanding of food composition and cooking processes students will be able to critically evaluate the too often confusing and contradictory dietary advice of western society.

Luisa Petrelli worked for Italian wine and food magazines and is a member of the Academy of Italian Cuisine. She likes cooking and is considered particularly good in the Mediterranean cuisine. In 1991 she bought in Liguria an old farm located in front of Portofino with an extraordinary view at the Tigullio Gulf. This small property is called “Rosmarino Farm” because is surrounded by secular plants of rosemary. It has an ancient stone-house and some 1,000 olive trees growing in stripes of land sustained by dry-stone walls built in centuries. The farm can only be reached by foots through a medieval road paved in stones. The farm house is a few hundred year old and has been restored maintaining the old characteristics (fire heating, fire cooking, stone walls, wood floors, old instruments, etc.). This country-house has been published as an example of the old life-style and decoration. Since the Luisa cuisine has been always based on extra virgin olive oil, in 1995 she decided to start a limited production of high quality extra virgin olive oil for top cuisine and gourmets. The first customer was Hotel Cipriani in Venice. Since then other prestigious names and famous cooks decided to buy her oil. Today, taking advantage of the local oil masters, “Costa dei Rosmarini” is produced in Imperia in small quantities at a time and its superior quality is constantly controlled by official tasters of ONAOO (the Italian Association of Olive Oil Tasters).

    Mediterranean Cuisine Mediterranean Baked Sweet Potatoes Serves 4 Ingredients ● 4 medium sweet potatoes (~140 g each) ● 1 15-ounce (425 g) can chickpeas, rinsed and drained ● 1/2 Tbsp olive oil ● 1/2 tsp each cumin, coriander, cinnamon, smoked (or regular) paprika ● Optional: P inch of sea salt o r lemon juice Garlic Herb Sauce ● 1/4 cup (60 g) hummus (Use the homemade hummus!) ● Juice of 1/2 lemon (~1 Tbsp) ● 3/4 - 1 tsp dried dill (or sub 2-3 tsp fresh) ● 3 cloves garlic, minced (1 1/2 Tbsp or 9 g) ● Water ● Optional: S ea salt to taste Instructions 1. Preheat oven to 425 degrees F (204 C) and line a large baking sheet with foil. 2. Rinse and scrub potatoes and cut medium dice. This will speed cooking time. 3. Toss chickpeas and sweet potatoes with olive oil and spices and place on a foil-lined baking sheet. 4. While the sweet potatoes and chickpeas are roasting, prepare your sauce by adding all ingredients to a mixing bowl and whisking to combine, only adding enough water to thin so it’s pourable. Taste and adjust seasonings as needed. Add more garlic for more zing, salt for savoriness, lemon juice for freshness, and dill for a more intense herb flavor. I found mine didn’t need anything else. 5. Also prepare the parsley-tomato topping by tossing tomato and parsley with lemon juice and setting aside to marinate. 6. Once sweet potatoes are fork tender and the chickpeas are golden brown - roughly 15-25 minutes - remove from oven.
