    Projekt 2011-20-64-00318 Nitrit og nitrat i kød Udført af Marianne Jakobsen, Laboratoriet, Fødevarestyrelsen Rapport udarbejdet af Marianne Jakobsen, Laboratoriet, Fødevarestyrelsen Projektledelse ved Mette Christiansen, Kemi og Fødevarekvalitet, Fødevarestyrelsen Konklusion Fødevarestyrelsen gennemførte i 2015 delprojekt 2011-20-64-00318 ”Nitrit og nitrat i kød”. Projektet var en del af projekt 2011-20-64-00316 ”Overvågning af tilsætningsstoffer i fødevarer”. Det er vigtigt fortsat at overvåge indholdet af nitrit og nitrat i kødprodukter, ikke mindst fordi Danmark den 22. maj 2015 fik forlænget tilladelsen til at fastholde de lave grænseværdier for nitrit i kødprodukter i yderligere 3 år. Tidligere overvågningsprogrammer har vist, at nitrat tilsættes kød, hvor det ikke er tilladt, samt at nitrit og nitrat mærkes forkert. Der blev udtaget 213 prøver. 161 (76%) prøver kom fra Danmark og 52 (24%) fra andre EU-lande. 95 prøver (45%) udtaget i engrosleddet og 118 (55%) udtaget i detail-leddet. Ingen prøver var økologiske. Der blev konstateret 10 fejl i 7 ud af 213 prøver (svarende til 3%): 2 overskridelser af grænseværdi for nitrit, 2 overskridelser af grænseværdi for nitrat, 1 tilfælde af ulovlig anvendelse af nitrat og 5 deklarationsfejl.
