BY ANDREW SESSA Click here to view snapshots from Andrew's journey. Squinting into the sun, and with my quads burning, I pedal through the last hill of a cliff-climbing ride. The road flattens as I cycle around one more corner, and I can finally appreciate my surroundings. In front of me, a centuries-old, sun-bleached stone tower rises, its cylindrical shape narrowing as it reaches toward the sky. Together with its brethren, which I can barely see in the distance, it stands guard over miles of pale calcite cliffs whose rocky summits peek out between clumps of spiky sea grass and shrubs. Beyond, the Adriatic Sea extends to the horizon, its azure waters turning turquoise near the rocks below. I breathe deep. After a recent rain, the air smells fresh and green, with a healthy helping of salt, too. I see a sign that reads "Villaggio Paradiso," and I can almost believe its promise. Maybe I really have pedaled my way to paradise. This is Puglia - the most picturesque piece of Italy you've probably never heard of. Hidden away in the heel of the country's boot, this rugged land beguiles with whitewashed villages and sapphire-blue waters, endless olive groves, and overgrown vineyards. Here, fertile fig trees produce fruit that ripens to bursting, and the sand practically shines on golden beaches.

    Disciplinare Mozzarella di Gioia del Colle Articolo 1 Denominazione La Denominazione di Origine Protetta “Mozzarella di Gioia del Colle” è riservata al formaggio fresco a pasta filata che risponde alle condizioni ed ai requisiti stabiliti nel presente disciplinare di produzione. Articolo 2 Caratteristiche del prodotto La “Mozzarella di Gioia del Colle” è un formaggio fresco a pasta filata, ottenuto da solo latte intero crudo di vacca, eventualmente termizzato o pastorizzato, ed è caratterizzato da una tecnologia di produzione basata sull’impiego di siero-innesto autoctono. Composizione chimica (valori su prodotto fresco): - lattosio ≤ 0,6 %; - acido lattico ≥ 0,20 % su s.s .; - umidità 58-68 %; - materia grassa 15-21 % su t.q.. Il prodotto ha sapore di latte delicatamente acidulo, con lieve retrogusto di fermentato/siero acido, più intenso nel formaggio appena prodotto; odore lattico, acidulo, con eventuali sfumature di burro. La “Mozzarella di Gioia del Colle” si presenta con una superficie liscia o lievemente fibrosa, lucente, non viscida, né scagliata. L’aspetto esterno è di colore bianco, con eventuali sfumature stagionali di colore paglierino. Al taglio la pasta, che deve avere consistenza elastica ed essere priva di difetti, presenta una leggera fuoriuscita di siero di colore bianco. Per il sapore le note prevalenti sono di latte delicatamente acidulo, con piacevole retrogusto di fermentato, più intenso nel formaggio appena prodotto. Le note odorose prevalenti sono di latte/yogurt bianco con eventuali sfumature di burro. Non è consentito l’impiego di conservanti e additivi/coadiuvanti. La “Mozzarella di Gioia del Colle” si presenta nelle seguenti tre diverse forme: sferoidale, di nodo e di treccia.

    THE PRIORY OF BARLETTA The prioral domus of Barletta, situated on a flat area just outside the city walls, was founded shortly after the middle of the 12th century as replacement for that in Bari, which had been demolished following the rebellion of 1156. Though already in ruins by 1399, it remained active until 1528, the year in which it was destroyed by French troops led by Renzo de Ceri. Having been moved inside the city walls, it remained there until the mid-16th century, when it was transported to its present location in the Church of the Holy Sepulchre. The priors, Fra’ Don Tommaso Castromediano, De Giovanni, and Piccolomini, later embellished it with a bell tower, which they adorned with the coat of arms of the Order. Meetings of the Prioral Assembly were held in the Sacristy. Among the relics conserved was a fragment of the Cross of Jesus. Attached to the church was the Pilgrims' Hospital, owned by the Order and was served by the Knights. The Priory’s assets included several landholdings which supplied it with a very substantial income: the two Bailiwicks of SANTO STEFANO and SS. TRINITÀ DI VENOSA; the Magistral commandery, reserved for the Grand Master, of MARUGGIO; the commandery of SAN GIOVANNI DI TROIA, one of the most ancient properties of the Order, was first mentioned in the Bull of Pope Lucius III of 1182, which granted the Order the Church of the Holy Sepulchre of Troia and the Church of Santa Maria di Balneo; the commandery of SS GIOVANNI E STEFANO DI MELFI; the commandery of GRASSANO, the origin of which dates
