Click here for the series schedule. WEEK IN REVIEW Juneteenth, also known as Freedom Day, is celebrated as an independence day for African Americans. It recognizes June 19, 1865 the day that the Emancipation Proclamation was announced to end slavery to the last 250,000 enslaved black people in Galveston, Texas. Juneteenth today, celebrates African American freedom and achievement, while encouraging continuous self-development and respect for all cultures. As it takes on a more national, symbolic and even global perspective, the events of 1865 in Texas are not forgotten, for all of the roots tie back to this fertile soil from which a national day of pride is growing. Cumin, ground • 16 Each Red Onion Petals, 1.5” x 1.5” (1-2 Onions depending on • ¼ Bunch Cilantro size) • 1 Tbsp. Garlic, chopped • 16 Each Pineapple Cubes, 1” x 1” (1-2 Pineapples depending on size) • 1 tsp. Salt, kosher • 8 Each Wooden Skewers, 10-12”, soaked in water • ½ tsp. Black Pepper, ground • 1 Recipe Pineapple BBQ Sauce • 8 Each Chicken Thighs, boneless, skinless PROCEDURE PROCEDURE • Remove chicken thighs from marinade. Cut each chicken thigh in half, yielding 16 pieces. • Combine all ingredients other than cilantro and chicken into a freezer bag or container, mix well. • Place one red onion petal onto skewer. Add one pineapple cube. Next add one piece of chicken, going lengthwise so its spreads out • Add chicken and cilantro. Keep in marinade for 2 hours or for better cooking. Add another round of red onion, pineapple, overnight for maximum flavor. and chicken. PINEAPPLE BBQ SAUCE • Build the rest of the skewers in the same fashion. • Place skewers on hot grill, rotating occasionally to avoid burning, YIELD: APPROX. 1 CUP until chicken reaches an internal temperature of 165°F. For added INGREDIENTS flavor, brush on the Pineapple BBQ Sauce throughout the cooking process. • 1 Cup Sweet Baby Ray’s BBQ Sauce • Serve with Pineapple BBQ Sauce. ENJOY!!!! • ¼ Cup Pineapple, rough chopped (Tidbits) • 1 tsp. Sriracha PROCEDURE • Mix all ingredients together in mixing bowl with rubber spatula. • Reserve covered under refrigeration until use. .
