Global Malt Lex-Icon As Published on the Maltmadness.Com Web-Site ( GLOBAL MALT LEX‐ICON Check‐list v3.0 This check-list of the world’s malt whisky distilleries is essentially a country-by- country summary of the Global Malt Lex-icon as published on the maltmadness.com web-site (www.maltmadness.com/lexicon.html). Each distillery has a little check-box to allow you to keep a quick-and-easy record of the distilleries whose malt whisky you have tasted. Distillery names in red are distilleries whose malt whisky has been bottled as a single. When a name is given in green that means that the malt has not matured long enough yet to be bottled. Blue distillery names signify distilleries that distill malt whisky for blending purposes only (at the moment; who knows what the future will bring!). When a distillery is not operating anymore, its name is given in italics (if a distillery itself is still operating, but distilling of malt whisky has been discontinued, the distillery name is given in bold italics). In parentheses behind each region and country name are the numbers of distilleries in the various categories. What we have not included are malt whisky distilleries ‘in the planning stage’. There are quite a few of these plans worldwide but, rest assured, as soon as the first drop comes off their stills, they will get their rightful place in the GML! • History of Scotch Whiskey
Scotch Whiskey The Gaelic "usquebaugh", meaning "Water of Life", phonetically became "usky" and then "whisky" in English. However it is known, Scotch whisky, Scotch or Whisky (as opposed to whiskey), it has captivated a global market. Scotland has internationally protected the term "Scotch". For a whisky to be labeled Scotch it has to be produced in Scotland. If it is to be called Scotch, it cannot be produced in England, Wales, Ireland, America or anywhere else. Excellent whiskies are made by similar methods in other countries, notably Japan, but they cannot be called Scotches. They are most often referred to as "whiskey". While they might be splendid whiskies, they do not captivate the tastes of Scotland. "Eight bolls of malt to Friar John Cor wherewith to make aqua vitae" The entry above appeared in the Exchequer Rolls as long ago as 1494 and appears to be the earliest documented record of distilling in Scotland. This was sufficient to produce almost 1500 bottles, and it becomes clear that distilling was already a well-established practice. Legend would have it that St Patrick introduced distilling to Ireland in the fifth century AD and that the secrets traveled with the Dalriadic Scots when they arrived in Kintyre around AD500. St Patrick acquired the knowledge in Spain and France, countries that might have known the art of distilling at that time. The distilling process was originally applied to perfume, then to wine, and finally adapted to fermented mashes of cereals in countries where grapes were not plentiful. The spirit was universally termed aqua vitae ('water of life') and was commonly made in monasteries, and chiefly used for medicinal purposes, being prescribed for the preservation of health, the prolongation of life, and for the relief of colic, palsy and even smallpox.

The Macallan single malt was distilled in 2005, and matured in sherry casks until 2019. Then, Gordon & MacPhail bottled it up at 43% ABV. Sherried Macallan is always a winner in my book. Speyside All Speyside whiskies are Highland whiskies; but, not all Highland malts are Speysiders. What is the difference, why the distinction of the Speyside region? The answer is quite simply the River Spey. From its source in the Cairngorms National Park, the river meanders 107 miles, disgorging into the Moray Firth at Spey Bay. Speyside, located in the middle of the Highland region, is also considered by many the heartland of Scotch production. Today, more than half of Scotland’s working distilleries are located in this region. Geographically, Speyside encompasses the area east and west of the River Spey, partly in tandem with the Morayshire county lines. There are several key towns in region. Forres, to the east, is home to Benromach Distillery and a short drive from Dallas Dhu, a mothballed distillery now transformed into a visitor destination. Westerly are the distilleries of Strathisla, Strathmill, Glen Keith, and Aultmore, all located in Keith. Centrally situated is Gordon and MacPhails, offices, and warehouses in the Royal Burgh of Elgin, also known for its mediaeval cathedral ruins.
