Trend Forecast Liquid Lunch Liquid Lunch LiQuId lUnCh The phrase “liquid lunch” has been synonymous with yuppies and city slickers, but their is a shift in culture and attitude happening. More and more people, when going out for drinks are opting for less in quantity and an increase in quality, both with product and service. Consumers are looking for something special, the theatre of drinks creation unfolding before their eyes. Made by a mixologist or bar tender who are experts in what wine, beer or cocktail will quench their thirst, and serve it in exciting and creative ways. The theatre and experience that consumers are looking for doesn’t end with drinks either, this trend is going to bring in a renaissance in the “bar snack”. This doesn’t mean a bag of peanuts and some pork crackling; the food and snack being served should be as premium and lovingly made as the drinks. Consumers are increasingly interested in the flavour profile of various spirits, and are eagar to be more knowledgeable and informed with what they are drinking and what they want cocktails to be made with. As proven with the popularity seen over the past years with the resurgence in gin, this popularity and interest will shift to other spirits and the flavour profiles they offer. Bramble, with its understated bare brick walls, leather armchairs and menus bound in old books, came onto the scene in 2006 with a bang, showing the UK what high-end creative cocktails should look like. Expect old-school hospitality on your visit, with table service and live music every evening. #19 tHe gIbSoN, lOnDoN Stylish, sophisticated, cool and unique. There’s not much more you could want from a cocktail bar other than a great atmosphere, which The Gibson in Old Street has in abundance. Expect jazz, blues and all kinds of glamour when drinking in The Gibson; perhaps you’ll also be served by an old-fashioned flapper girl. On the menu, you’re encouraged to choose a season “you feel like visiting” then select a month and a drink from the month – your option will then “set the co-ordinates of your destination” in history. Opium‘s concept is beautiful, modern and fresh. Fine art is a big part of the business image and it really works. Opium’s website describes the bar as: “A Chinatown cocktail bar hidden above Gerrard Street. If you can still find the Jade Door when the hinges are open and find your way up the red stairs, let us transport you back to 1920s Shanghai with a twist of modern indulgence.” Opium also present an excellent dim sum menu to enjoy alongside your cocktails. #50 bEnEaTh, bAtH Powered by the Botanist, Beneath bar in Bath is the new kid on the block. With a different image and a different menu to the Botanist, Beneath is big, edgy and inspired by the darker side of botany – dead plants? Perhaps this information on the bar’s website explains it a little more clearly: “Inspired by the rise of apothecary and the darker side of botany”. #36 tHe nUtHaTcH, mIdDlEsBrOuGh The Nuthatch is bringing to the masses of Middlesbrough what should have been brought a long time ago – sophisticated cocktails that have been well thought out and designed for discerning drinkers.
