Received 17 March, 2017; Accepted 6 July, 2017 The Lablab bean (Lablab purpureus) has potential of being an outstanding resource for human food and animal feed in tropical agricultural systems. The bean is however grossly underutilized due to anti- nutritional factors, which may affect its nutritive value and organoleptic properties. In this study, twenty-four (24) lablab bean accessions were assayed for sensory flavor characteristics and volatile compounds to identify acceptable selections for adoption and incorporation into a rationalized breeding program. Sensory tests were carried out by a panel of 11 trained evaluators. Volatile compounds were extracted using hexane and separated using gas chromatography. Sensory tests showed significant differences for the bitter taste (p≤0.05), with accession 10706 showing the highest odour and bitter taste levels, while accession 13096 had the lowest. Two hundred and sixty two (262) volatile compounds were identified and grouped into 12 classes.

Hormonal changes, especially the decreased of estrogen, considered as a main trigger of health issue like osteoporosis in postmenopausal women. While, hormon replacement therapy has many side effects, high-isoflavon diet emerge as an alternative for helping post menopause women encouter hormonal imbalance because isoflavon role as phytoestrogen. Panti wreda (elderly nursing home) is one of the parties that can help the nutritional management of postmenopausal women regularly. This research aims to looking for local food which can be used especially by elderly nursing homes as an isoflavon-contained diet. This research was carried out by in-depth interviewand observation in Panti Wreda Mandiri Salib Putih (PWMSP) Salatiga along with literature review. Daun kelor (Moringa oleifera L.) contains isoflavon and calcium which helping postmenopausal women deal with osteoporosis issue. Therefore, daun kelor (Moringa oleifera L.) can be used either by PWMSP and society as an altenative diet for postmenopausal women. • From the Food Bank Kitchen Thanksgiving Recipes Thanksgiving Day Is a Time Many People Get Together with Family and Friends and Enjoy a Feast
From the Food Bank Kitchen Thanksgiving Recipes Thanksgiving Day is a time many people get together with family and friends and enjoy a feast. A typical holiday lunch or dinner includes turkey smothered in gravy, starchy side dishes high in sodium, and sugary, high-fat desserts. It is easy to over-eat and take in huge amounts of calories, carbohydrate, saturated fat, sugar, and sodium. This year, try a few healthy recipes and substitutions. When you do go for the heavy foods, stick to moderate portions and eat slowly to appreciate each bite. 1. Make some healthy swaps to your recipes. Substitute 1% milk for whole milk or light cream, or use plain fat-free Greek yogurt or low-fat sour cream instead of regular sour cream or mayo. Choose light turkey meat over the dark meat to save calories. Worried about flavor? You can use half of the regular ingredient, then use a lighter substitute for the rest. 2. Get moving. Instead of eating, then sitting on the couch, take a walk after eating. Or turn on some music and dance! Adding activity to the day uses up extra calories. In addition, your body burns up calories faster for a few hours after. 3. Pack your plate with veggies. Try to make half of your plate vegetables. This will not only cut the calories in your meal but can add vitamins and fiber. If you can, limit starchy side dishes like potatoes, bread, and stuffing to two choices. 4. Be wary of “sneaky” foods. “Sneaky” foods are foods that appear healthy, but actually are very high-calorie.

_____________________________________________________________________________________ Recipe from Fast, Fresh & Green by Susie Middleton. Copyright 2010. Published by Chronicle Books, San Francisco, CA. Reprinted with permission of the publisher. All rights reserved. Green Bean, Snap Pea, and Pesto Salad with Cherry Tomatoes and Fresh Mozzarella Serves 6 For impromptu entertaining on a summer evening, this is your salad, your side dish, your everything. So just throw some steaks on the grill and you’re all set. Or even better, start a beer- can chicken roasting on the grill while you make this salad. It will take you a little bit of time to prep the vegetables, but prepared pesto (preferably a good one from the farmers’ market or one made locally) is a time-saver here. Actually, if you’re not in the mood to make your own pesto over the summer, you should do a taste comparison of several brands to find your “house” pesto. That may seem kind of crazy—buying several and tasting them side-by-side—but you will be blown away by the differences. Some of the national brands are, well, to be polite, not good. Some are overly salty, some have no basil flavor (if you get stuck with one of those, just add more fresh basil to this salad). But more often these days, you can find good locally made pesto in neighborhood and farmers’ markets. You may not be in the habit of using whole or torn herb leaves in a salad, but with basil, in particular, larger pieces give you a welcome burst of flavor without the bitterness that comes when basil is chopped too much (especially with a dull knife).

Abstract A field study was conducted for two years with seventeen lablab [Lablab purpureus (L.) Sweet] lines to characterize its productivity under Virginia’s agro-climatic conditions and to determine lablab’s potential as a forage crop. One sample per replication (0.3 m row length) was harvested approximately 90 days after planting to record fresh weight. These samples were dried to a constant weight to record dry weights. Dry and fresh yields were not affected by lines and year of production. Overall means of fresh and dry yields varied from 47 to 91 with a mean of 62, and 9 to 15 with a mean of 13 Mg/ha, respectively.
