Welcome to the 36th International Festival - 60 years of ISB ISB is celebrating its 60th anniversary and would like to, in association with the Family Association, extend a warm welcome to the 36th Annual International Festival. Our diverse school community is very proud of this major event. This is an opportunity for countries and cultures to come together to share with one another and to have a great day of fun. Doors open at 10:00 but at 10:45 our Director Kevin Bartlett, will officially open the Festival, followed by the Parade of Nations at 11:00. Outside and in the Gyms you will find around30 country booths representing 57 countries selling fabulous food and products unique to their own countries and cultures. There will be experiences for all tastes and ages! Children are well catered for with ‘Plate Painting’, other activities, and a resident clown roaming about! Entertainment this year will be on the stage in the Drama Studio (formerly Annex). An amazing variety of performers have signed up so be sure to pop in! The full schedule can be found later in this programme. Take the opportunity to peruse the non-country booths as well! There will be several including: The Jane Goodall institute, The Board of Trustees, Kattenberg Krafts, and more! The popular Used Book Sale will be found outdoors in the Tent Village this year. Remember to buy your Raffle tickets in the New Gym. The draw will be at 16:00. ISB is an environmentally friendly school so please dispose of your trash in the colour coded bins. The First Aid Station can be found in the Foyer, near the Gym doors. For questions and Lost & Found please ask at the Festival Information Booth in the New Gym. This Festival will only be successful due to the help and support of ISB Staff and Faculty, Family Association, country booth co-ordinators and countless parent and student volunteers who have worked hard to make this event possible. Visitors can also buy Bangladeshi handicrafts. Belgium Inge De Lathauer - Duyck This year, Tintin will be at ISB! Swing by the Belgian booth to stock up on Tintin memorabilia and to sample some of our local specialties. As in the past, we will serve refreshing beer and delicious homemade Belgian waffles. We will also be introducing other Belgian treats such as boudin de Liège, fromage d’abbaye and a famous Belgian sweet, the curberdon. Children can play “La pêche aux canards” sponsored by our friendly neighborhood toy store L’Atelier de Gepetto. And keep an eye out for our student hostesses who will be handing out free samples of delicious pralines thanks to a very generous donation from Godiva! Brazil Sandra Marcourakis For a bit of sunshine, plenty of smiles, a relaxed chat and the world famous caipirinhas, come and join us at the Brazil booth. You can also taste delicious non- alcoholic tropical drinks, Guaraná soda, Brazilian chocolate truffles, freshly baked pão de queijo and other delicacies. The sausages were produced in local meat industries in a traditional way without the use of starter cultures. Samples were collected from three production batches on day 0 and again after 2, 4, 7, 14 and 28 days. Microbiological analyses included the principal ingre- dients (meat, fat tissue), casings and additives (sugar, mixture of spices, salt), and the finished products. From all three production batches of fermented sausages from each in- dividual country, 150 strains of lactic acid bacteria and 150 strains of coagulase-negative cocci were isolated.

Hungary Key words: Meat products, Cholesterol content, fat content, Enzymatic methods Background In the latest decades the nutritionists encouraged the people in Hungary to eat meal with low fat and Cholesterol content. At the same time an attack was made upon the Hungarian Meat products. It was publicly said that pork and beef and the products made of them how unhealthy were. So there was an unfavourable campaign against the meat industry. It could not have been found reliable results about the Cholesterol content of Hungarian Meat products, so it was decided to determine it. On the other hand it is important to know the exact Cholesterol content of a product if one would like to publish it on the label or to decrease it Objective The objective of this study was the determination of Cholesterol and fat content of different Hungarian Meat Products Methods The Cholesterol content of meat and meat products was determined by two methods during the experiments: 1. Enzymatic colorimetric method using EnzaChoI®-F reagent (Organon Teknika Medizinische GmbH, Eppelheim, Germany) and calibration standard. 2: Later the method was changed, and the colorimetric method using Cholesterol (Cat. No. 139050, Boehringer Mannheim, Germany) was applied. The free fat content of samples was determined by the ISO 1444 method. Results and discussion The Cholesterol content of investigated pork meat samples depended on their fat content. The pork samples with higher fat content have higher Cholesterol content.

In the second half of the 20th century, sausage production has been gradually industrialized and a very large assortment of fermented sausages has been developed. Aiming at maintaining the traditional sensorial quality of dry sausages and to assure their safety, although produced in industrial scale, it is important to develop and use protective cultures, after selection of strains isolated from naturally fermented products. A prerequisite for this research is to identify the main differences in the traditional production of fermented sausages, in various countries, and to study the evolution of physicochemical and sensorial characteristics of the sausages, during natural fermentation and ripening. Key words: fermented sausages, physicochemical features, sensorial characteristics Objectives The main task of the research was to investigate the physicochemical features (pH, aw and NaCl content) and the sensory characteristics of certain naturally fermented sausages, as produced traditionally in different countries (Greece, Serbia and Montenegro, Bosnia and Herzegovina, Croatia, Hungary and Italy).
