Special Service Awards It was a night of celebration for Paparoa Lions at our September dinner meeting when we honoured two of our members with some special awards. Ribollita Ribollita is a classic Italian soup, good for cold or warmer days, which I saw printed in North and South magazine. I often make it as it's a healthy and very tasty option, best made the day before so the flavours can develop. 2 tbsp olive oil 400gm can of cannelloni 4 rashers streaky bacon beans - drained 1 large onion 2 -3 cups of cavolo nero 3 or 4 sticks of celery (or kale) chopped 2 cups grated carrot, parsnip Salt and freshly ground or pumpkin or a mix of all black pepper 2 tbsp tomato paste 3 slices of stale sour 400gm of crushed tomatoes dough bread - no crusts (tin or bottled) (or similar bread) 2 tsp chopped rosemary Chopped parsley to garnish 1.5 litres of vegetable stock Extra olive oil to serve 1. Heat oil in pan and fry onion, bacon and celery until translucent 2. Stir in grated vegetables, add tomato paste and cook, stirring well, until darkened 3. Stir in tomatoes, rosemary, vegetable stock and beans and cook 15min. 4. Add the cavolo nero, season to taste and continue cooking for 20min – add more stock if needed. 5. Add bread broken into pieces and mash a little as it softens to thicken the soup 6. It is ready once the cavolo nero is tender. 7.
