A lot of you will recognise a familiar face who is back behind the counter at Bendigo Bank. Karen Charles has re- joined the team after returning to the area from Coffs Harbour. Karen joined Bendigo Sanctuary Point approximately 8 years ago. Through this time she also serviced our Vincentia Agency. Since the closure of that Bendigo Agency Karen moved on to pursue her career and further studies within the financial sector & local community based banking institutions. Karen has returned to the Bay & Basin community which she calls home where she was actively involved within the community and raised her family and is looking forward to assisting our clients. 10 From Strength to Strength Recently your Community Bank celebrated its 15th Birthday. During these first 15 years we have built up a very strong foundation for your Community Bank to go on delivering real tangible benefits to the local community. Just look at Clifton Park in Sanctuary Point as an example, what was once an overgrown paddock is now a very usable public space. The future of the bank is looking better than ever at the moment with the recruiting of some senior staff with a view to improving the customer service in the branch to a new level. These new recruits are, Karen Charles (see Managers Report page 3 for her story) who was with us prior to moving to the North Coast, Jessie Jackson who has moved to the coast from the Bendigo Branch at Hay in the Riverina and Cheryl Collett, who has moved south from the Oak Flats Branch in the Illawarra. 13 Home Cooking Vietnamese Rice Paper Rolls with Hoisin peanut dipping sauce courtesy of Australian Home Cooks

INGREDIENTS FOR THE ROLLS DIPPING SAUCE 18 medium size cooked prawns 1/2 tbsp vegetable oil 130g cooked chicken, thinly sliced 2 cloves garlic, minced salt 3 tbsp hoisin sauce 1/4 tspn minced ginger 3 tbsp chicken stock 30g rice vermicelli 1 tbsp peanut butter 12 pc rice paper (16cm) 1 tbsp brown sugar small baby spinach leaves 1 tbsp chilli sauce shredded carrot 1/4 tspn red chilli flakes cucumber strips 1 tbsp honey fresh mint leaves and coriander leaves 1 tbsp soy sauce chinese chives

METHOD FOR DIPPING SAUCE: • Heat the vegetable oil in a pot, add garlic and stir fry till fragrant. Add all ingredients into the pot and cook till the sauce boils and thickens. Transfer to serving bowl. RICE PAPER ROLLS • Slice the prawns in halves horizontally. Rinse, pat dry and set aside. • Bring a pot of water to the boil, add the rice vermicelli and cook for 5 - 6 mins. Once cooked, remove and rinse with cold water. Drain and set aside. • Wash and pat dry the baby spinach leaves, fresh mint leaves, coriander leaves and chinese chives, shred the carrot and cut cucumber into strips. Set aside. TO WRAP • Take a piece of rice paper and soak in warm water for 10 seconds or until it becomes translucent. • Place the rice paper onto a cutting board. Place a leaf of baby spinach, some shredded carrot, a cucumber strip, 1-2 mint leaves, chives and a stalk of coriander leaves onto the rice paper. • Next, place a few strands of rice vermicelli on the top • Add 2 slices of chicken, 2 slices of prawn roll and wrap tightly. NOTE: you need to work quickly as the wraps become sticky as they cool. COMMON COMPOSITION RULES - The Blue Hour From the name, one could deduce that the Blue Hour actually lasts one hour, but the reality is far different. The Blue Hour is minutes after the sun has gone below the horizon and the hue of the sky takes on a light bluish tinge followed by the dark blue and then pitch black, which then is classed as night photography. The reverse is true for the morning. From the complete darkness of the night sky as the sun is making its way towards, from below, the horizon, the sky will turn from black to dark blue and finally to a light blue until it breaks the horizon. As mentioned previously, depending on cloud cover near the point of sunrise/set, this Blue Hour might in fact only last a matter of minutes, not the full hour that the name suggests. Being what it is, if you are photographing during that time, you will most definitely need a tripod and shutter release cable to avoid ‘camera shake’. Your ISO should be in the range of 100 to 200, your aperture should be as wide open as possible (f2.8 to f8 or so) for good depth of field and your shutter speed from seconds to long exposure. This type of photography lends itself to beautiful landscapes and cityscapes as well. Next Issue: Panning

19 BAY & BASIN COMMUNITY RESOURCES (BBCR) BBCR MEN’S SHED NEWS

The Bay and Basin Men’s’ Shed has been busy over the past few months harvesting fresh vegies and produce from our gardens and chickens. The fresh produce has been extremely popular with volunteers, BBCR consumers and staff all enjoying the benefits of freshly grown items. In August, we welcomed John who joined our team of volunteers in the shed project. John has joined our weekly home/garden maintenance crew (HMP) and with the recent harvest made up some fresh produce boxes to deliver to BBCR consumers registered with the HMP program. A big thanks to fellow HMP volunteer Steve for taking John under his wing and showing him the ropes. This month volunteers have planted a whole new crop of vegies ready for a summer harvest. The shed has also been busy with the design and construction of several recycled timber teepees and a tree surrounds seat for the local public school. These projects were very popular with our volunteers and user groups as all got involved in their construction. The sheds very own music group The Pirates continue to play music twice a month under the CVS program for Shoalhaven based aged care facilities from Berry to Milton and these performances are enjoyed by the residents and also the band who enjoy sharing their love of music. The shed will be starting a new woodwork group with men from Coastal Waters under the CVS program to begin in term 4. The group will be making timber trucks, which when completed are donated to the hospitals children’s ward and other charities. In the latter of these two years, Jordan represented NSW Primary Schools in another victorious interstate exchange team. This competition was played at the Leonay Golf Club in western Sydney. Both boys went on to receive scholarships from the BERNIE REGAN MEMORIAL SPORTING TRUST ( Monthly Feature December 2004) in 2004 and 2005 respectively. Both were also included in the Illawarra Academy of Sport golf program around these years.

For five weeks she toured Western Australia, Denmark, Sweden, England and Scotland to visit sites that relate to maritime archaeology, meeting with museum professionals and educators along the way. Ms Joura learnt about the WW2 battle between HMAS Sydney and the German ship HSK Kormoran.
